Garlic Cheese Quick Bread

Just wanted to say thank you for this recipe! I used it with my gluten-free flour mix (using the suggested changes for self-rising flour) to make a small loaf and some buns and they turned out great!

Salmon Patties I

Delicious! So simple yet so good. The only change I made was to use plain bread crumbs and add salmon grilling seasoning. I won't use canned salmon any other way now!

Vegetarian Spaghetti

This was very good. I used whole wheat spaghetti and roasted garlic pasta sauce with plain diced tomatoes. I also used kidney beans in place of garbanzo and cheddar instead of parmesan cheese. Made a lot of sauce.

Fabulous Foolproof Lasagna

Found this recipe easy and convenient for a busy day. I used fresh noodles as I find no boil hit and miss. A little more expensive but guaranteed to cook. Taking other suggestions, I added a layer of spinach. My wife is a lasagna connoisseur and she was quite surprised when I told her it was canned sauce, as I usually make my own from scratch which can be very time consuming. I'll definitely make this again.

Seared Rabbit with Rosemary Potatoes

we didn't have fresh anything, so I used botled spices, the potatoes were really nice, but for the rabbit, I'd been slow cooking it in water all morning when I looked for a recipe so I tossed it in the spice and tomato paste after I'd shredded it from the bones. Good recipe, will make it according to the recipe next time. I'll be prepared! thanks for sharing :)

Cake Mixes from Scratch and Variations

I've made this 3 times now and I think I'm done trying. This last time, I made yellow cake cupcakes and one batch was overdone so I get how people say cornbread flavour but that didn't happen to the "good" batch. Even though one batch was alright I have tasted better from scratch cake recipes so I'll keep looking. The other times I made a yellow cake and pineapple upside down cake. None of them were eaten all up before they went stale so that why I only gave 3 stars: they are edible but not delicious. I think it boils down to a recipe that is so easy to mess up somehow but if you get it right on they are pretty good.

Spinach Pancakes

These were plain, but good. You have to add some sauce. I tried tzatziki sauce and that was good and I tried scheshwaan (sp?) sauce and that was even better. When I eat the rest, I'll try pasta sauce. Good way to eat spinach.

Eggplant Burgers

Good burgers. I coated them in flour/wheat germ/ cajun spice seasoning and fried them. Only microwaved them for 2min. I made a garlic and herb mayo for them and omitted ketchup and mustard. Ate with tomato, lettuce, relish and fried onions on toasted whole wheat buns.

Carrots and Onions Au Gratin

This was really good. I think more margarine is needed for the bread crumb mixture, but other than that, it was good. I didn't boil the onions and didn't need to and I also used cut up carrots and only boiled them a couple minutes. They were still firm and not soggy when they came out of the oven. My husband ate A LOT of this! He really liked it and so did I. My 5 year old didn't because of the onions, but you can't please everyone!

Breaded, Fried, Softly Spiced Tofu

This is a delicious way to make tofu. I used to make it with bread crumbs but I needed lots of egg before and after the crumbs to make them stick and to get it to fry right. This way is much better because the coating is finer and sticks much better. I didn't use broth, just the tofu juice. I used tofu that had been frozen and thawed in the fridge so it was 'meaty'. I didn't need to press it, just squeezed it out a little before breading. It turned out really well and tasted great with chile dipping sauce. My husband used plum sauce and my son used ketchup. All were tasty. I will use this recipe from now on.

Chocolate Caramel Pecan Pie

I wish I could send a picture, but it didn't last long enough! This was absolutely fantastic, though I wasn't paying attention and didn't get vanilla flavored whipped topping, just used whipping cream instead I think it cut down on the sweetness so it was nice. Also couldn't find any caramels so used toffee syrup it was yummyummyummy so good that when the kids were sleeping my boyfriend and I ate the rest! Naughty! We are having guests over for tea next week and will be serving this for dessert, thank you vry much for this recipe love it! Already have it memorized.
