Blueberry Muffins

made exactly as written, were really good, I would add another 1/2 cup of berries next time, but sweetness was just right

Deep Dish Potato and Pumpkin Pie

I didn't have pumpkin on hand so used a butternut squash instead, the flavour was fantastic but next time would peel and cube the squash instead of roasting it in the skin. Also I'd add a couple of sweet potato's. I didn't add the cheese and found it made a fantastic side dish, the kids ate it up so no complaints there!

Beer Pancakes

COORS LIGHT....Thats the beer to use, it doesnt have much taste and the pancakes turn out fairly fluffy. The picture is VERY decieving, the batter is Very runny, but a very good tasting pancake, I was very shocked. However it didnt yield as many as I would like. Very tasty though.
