Alu Baigan is a West Indian curry made with potato and eggplant which is served with roti or rice and kadhri. You can improvise with the ingredients if you are missing some; it tastes great even with just a few spices and hot pepper! I like my eggplant to be completely mushy.

Blue cheese, Port and walnuts are pureed in a food processor before being transferred into an attractive serving dish (or crock). Serve with crackers or baguette slices. Refrigerated, this will keep for three weeks. 

Blueberry Brie

Warm Blueberry Brie...we have this every year at our work's Christmas party. It is so tasty, it's addictive! You can also make this with raspberry sauce or sun dried tomatoes, both of which taste excellent. This will cook in the microwave in about 3 minutes. Serve with warm French baguette slices!
