Cream Cheese Frosting II

Reviewed: Oct. 13, 2008
Delicious. Not too sweet and very creamy. This makes a LOT of frosting - more than required for a 9X12 cake. I'll probably cut it in half next time.

Fast, tasty meal. I will add some spinach next time. The combination of cheeses is perfect.

Thai Steamed Mussels

Reviewed: Aug. 27, 2008
This is an excellent way to serve mussels. I've only ever done the safe tomato or butter based broth even though we enjoy hot thai food. I cut back on the curry only because I didnt want it seriously hot but will take it up to full heat next time. Delicious, and will make again.

Iced Mocha Fusion Shake

Reviewed: Aug. 3, 2008
Very yummy! I did decrease the amount of sugar to 1.5 and I still think it was a bit too much. I also used a French Vanilla rather than the Mocha.

Dill Lemon Chicken Pasta Salad

Reviewed: Jul. 30, 2008
I love this recipe. I made it for a potluck at work and I definitely had a few requests for the recipe. Rather than cooking the chicken, I bought a roaster chicken from the grocery store (the pre-cooked ones?) and just pulled the meat off of that. Oh, and that was with scalling the recipe WAY down! lol

Baked Tortilla Chips

Reviewed: Jul. 6, 2008
These were amazing. R said that these were the best tortillas he had ever eaten. I used Ancient Grain Tortillas (basically a multigrain that had seeds in it). I sprayed them with pam, and then sprinkled salt on them. WATCH them carefully in those last minutes as they will burn VERY quickly!

Sweet and Sour Meatloaf

Reviewed: Jul. 6, 2008
This was very good, although I guess you could say I didn't follow the recipe. I accidentally grabbed a can of tomato paste (yes, a large can), so I ended up mixing some of that with tomato soup for the sauce. It was very good, although I will have to make it again following the recipe. I also baked it in an 8" square pan...more crust, definitely cooked. It was still VERY moist.

Szechwan Shrimp

Reviewed: Jul. 3, 2008
This recipe gets a 4 because of the ease of preperation. Very simple. I also think that the taste was a bit simple. I will need to play around a bit to add some more flavor. I will make this again though.

Indian Dahl with Spinach

I can't do coconut anything, so left it out. It was still delicious. Served over basmati rice with the garam masala available for anyone that wanted to spice things up. Thanks.

Unbelievable Chicken

Reviewed: Jun. 30, 2008
I mixed the marinade in a ziplock bag and threw it in a cooler to go camping. Bought the chicken on the way, threw it in the bag and dinner was ready to be cooked by the time we unpacked! Grilled over charcoal...wonderful. I will definately do this again.

Crispy Orange Beef

Reviewed: Jun. 12, 2008
This was very good! I liked the texture of the beef. What I actually did was slice up a roast and froze half the meet for next time. I did find the whole process time consuming, and I want to figure out some shortcuts (hopefully having the meet precut will help). The reason for the 4 stars is that it is WAY too sweet. Less sugar next time.

Kielbasa and Veggies

Reviewed: Jun. 3, 2008
This was surprisingly good! I did make some changes. I used chicken kielbasa (less fat). I also used a lemon-herb seasoning and black pepper as I can't find lemon pepper. I threw in some garlic powder and hot sauce. Next time I would use hasbrowns (more evenly cut, and cook faster). Definitely make again!

We left out the bread and it was still outstanding. We served it on baby greens with lemon juice.

Chantal's New York Cheesecake

Reviewed: Jun. 1, 2008
Easy to follow instructions...well worth the cost of great creme cheese. The best recipe...my cake was light, fluffy and creamy. Covered in mangos, and stawberries...what a DELIGHT! A keeper for sure in my family!
