Sunday Chicken and Stuffing

I personally thought that this recipe was meh....I didn't really think I would make it again. I found that the stuffing was really wet and not good when reheated the next day. I also added some garlic powder and cayenne pepper (no parsley). The reason I am rating this still rather high, is that my husband asked me to make it again! My husband doesn't care about food. He liked this! lol

Pasta Pomodoro

WOW, this was delicious. Half way thru browning onion added sliced boneless chicken pieces with 5 garlic cloves (just so they don't burn). Once chicken is cooked I added 1 can of diced tomatoes etc. I left out the red pepper (personal taste). Suggest you use lots of fresh basil. Soo Good!!

Parmesan Ham Frittata

Not bad. I used this as a basic guideline. I used red instead of green pepper, added mushrooms, and omitted the garlic. I used a vegetable seasoning blend instead of the salt & pepper. I also just eyeballed all the veggies & ham instead of measuring it (as I do for most recipes). I made fried potatoes and onions to go with this and some toast. A nice light dinner!
