Unbelievably Yummy Chicken Casserole

really really good! My kids hate cassaroles as a rule but they loved this. Like many others I changed the whipped topping & added 1/2 cup mayo & 1/2 cup sour cream instead. Also, I added a package of stuffing mix (made up) as a topping.Made Sept 09

Glendora's Chocolate Fudge Pudding (Cake)

This is a nice pudding cake and better eaten hot with ice cream. For reviewers that complained about it being runny that is the way it is supposed to be: cake on top and a sauce on the bottom. Do not try to put on a plate - just spoon it out of the dish.

Orange Glazed Pork Tenderloin

After reading the other reviews, I made a few changes. I doubled the orange marmalade, and also used olive oil instead of butter. While there still wasn't a strong orange flavour, it was detectable and a very tasty pork meal. A definite make again.

Mushroom, Cheese, and Haddock Bake

This is a very good recipe for haddock - I used crimini mushrooms, omitted the dried chili peppers and substituted cheddar cheese for the blend suggested in the recipe. If you use fresh fillets, they'll be cooked after the first 15 minutes, so I broiled the cheese after the initial cooking time and that worked like a charm. The reason for the 4 stars - having access to fresh haddock all year around, I have other recipes that are just awesome. This one is great for a quick week-day meal.

Grandma's Butterscotch Pie

Tasted great. Made it for mother in law for her birthday (her fav). Never had it before, or even had seen one, but made it no problem. The only issue I had was I dont have an 'offical double boiler' I just use a pot of boiling waer with a glass pyrex bowl on top (have used this method for dozens of other double boiler instructions and had no problems). We after stirring forever, I couldnt get it to thicken even before I added my egg. I took it off the double boiler and poured it all in a pot and put it right on the burner. It thickened almost instantly, almost too quick had I not been right there. It turned out perfect. I just couldnt see it even getting hot enough the thicken with the double bolier. TASTED GREAT! Moter in laws eyes bugged out of her head she was so excited!

Blueberry Cornmeal Muffins

Fantastic! I made the recipe as written and they are soo good! My 3 year old, very picky son loves these muffins! Having read the reviews that said the muffins don't stay fresh, I stored these in the fridge and reheated them in the microwave... fantastic!

Shrimp and Feta Cheese Pasta

This was just a delicious recipe - and since I had most of the ingredients on hand, it was a great shrimp recipe to try. I did use fresh oregano for the dried and penne pasta for the linguini, but other than those two modifications, I followed the recipe. It is a definite make again, and a company good fast meal.

Buttermilk Pancakes I

This is a great recipe for pancakes. I substituted 3/4 cup plain yogurt and 1/2 cup milk mixed together, for the buttermilk, which was a more than acceptable modification (and one I got from a Cook's Illustrated video). I used my hand blender to mix the batter, and then folded in 1/4 cup chopped fresh strawberries, which added a tasty flavour. Thanks for the recipe, Leema.

Baked Cod with Boursin Herb Cheese

Easy and so very good. I used haddock (much better than our cod) and first time tried Laughing Cow but much prefer Boursin. As one reviewer suggested, I drained the tomatoes so the sauce would not be watery. Will be making again and again. Did not need to use butter at all.

Classic Cherries Jubilee

This is one of our favorite recipes for entertaining. Nearly always use the cherry juice rather than water and sometimes, when out of brandy, have subtituted a Portuguese almond liqueur. Whichever way it is always a hit.

Cream of Tomato Soup

I made this exactly as directed and was a little disappointed. I found the tomato juice taste very strong. And I am an onion lover but not in my cream soup. I think next time I will add onion salt and leave out the onions and salt. And I think leaving it to cool for 10 minutes then adding milk makes for a cool soup, instead of a hot 1. We had to heat it back up. Will make again, but with mild changes. Sorry if I offended the submitter.
