Zucchini Yogurt Multigrain Muffins

I added flax seeds, dried cranberries instead of raisins, and raspberry yogurt in place of plain and the added white sugar. Even with the substitutions, they turned out really good, and my 2 year old loved them.

Pumpkin Cream Cheese Muffins

So tasty but I will try a full half cup less flour next time as they tasted a bit too much of flour and were too dense and heavy. The flavor is there though, I am just hoping to perfect it :)

Really delicious with a bit of mozzarella added. Use the best cheese you can, and fresh herbs if they are avilable. It makes a big difference.

I too used margarine by mistake, not as easy to work with, next time butter flavored shortening will make flakier, other than that very yummy!! also will make 1 1/2 times the dough for better coverage.

Apple Walnut Cake

Reviewed: Nov. 7, 2009
I used 1/2 sugar as well on the apples, other half I used brown sugar, also substituted applesauce for oil for a bit more healthier, very moist and turned out nice and dark with the brown sugar. No need for icing!

Slow Cooker Teriyaki Pork Tenderloin

Reviewed: Nov. 5, 2009
I made this recipe with thick cut pork chops. I put them in frozen and covered with rest of the ingredients. Cooked on low in crockpot for 4 hours, put chops aside to rest and thickened sauce with a little corn starch. Easy and soooo yummy!

Maple-Garlic Marinated Pork Tenderloin

Reviewed: Oct. 31, 2009
This is a great recipe - and my confession is that I only had time to marinade it for an hour, and it was still very tasty. I made as directed, but reduced the maple syrup by 1/3 cup after reading some of the reviews. I drained the marinade and cooked it in a small pot for 10 minutes to make sure it was safe to use as a sauce, and then baked the pork for 40 minutes at 350 (until an internal temperature of 165 degrees F). Great company fare.

Homemade Chicken Fettuccine

Reviewed: Oct. 29, 2009
I did make some adjustments, more because of what I had on hand. I used penne pasta, added 3 minced garlic to the chicken and mushrooms while cooking and added halved grape tomatoes and sauteed pea pods before adding the 2% milk (which I substituted for the cream - and I used just 3/4 cup milk). Yummy!
