Hong Kong Style Egg Tarts

This makes a LOT of tarts. I got 40 muffin-tin sized tarts. The filling was awesome - spot on - but the crust could be substituted with a different crust recipe or mayve a puff pastry shell. Don't skip the straining step. You could alternatively skim off the foam using a spoon. The taste of these gets better after they rest a while.

I have been wanting to make this for some time now, but hubby is not a huge potato fan, nor does he look as forward to trying the indian inspired flavours as much as I do!! So, since he was out of town, I made this for me...cut back the recipe by half but left spices as they were based on other comments about doubling. I did opt to reduce the cayenne as I normally find it quite overpowering and I am glad I did as it was pretty hot! Regardless, I really enjoyed this - used canned diced tomatoes as I had some open in the fridge! SO GLAD I got to try this, definitely very yummy and I look forward to my leftovers!

Tomato, Corn and Avocado Salsa

Wow. I first ate this at a potluck and demanded the recipe! Now, I can't stop eating it. I +/- a lot of the ingredients, more tomatoes, more avocado, less onion, I play around each time I make. I am adding cilantro this time, give it a bit more mexican taste! Oh, and I don't add the olives either.

Alaska Salmon Bake with Pecan Crunch Coating

Excellent recipe. My wife who doesn't like salmon ate this and changed her mind. Very good. Made with chopped hazelnuts rather than pecans as it was all that was on hand, probably would have rather had pecans, but still very good, easy and delicious.

Sweet Dinner Rolls

Although, I do not have a bread machine any longer, I decided to make these rolls using the traditional method. I proofed the yeast in the 1/2 cup of warm water with 1 tsp sugar. Heated the milk, added the sugar, butter, salt,removed from heat, and stirred till disolved. Then added the beaten egg once the milk mixture was slightly warm. In a large mixing bowl I combined the yeast, milk mixture and added the flour gradually. Kneaded for about 8 to 10 minutes and let rise for 1 hour in a tea towel covered bowl. Punched down and formed balls for clover leaf rolls. Let rolls rise again for 1 hour. Baked at 375 for 15 minutes and brushed with melted butter. Delicious!!

Butternut Squash Soup II

I am currently eating a bowl of this soup and it is amazing! I will admit, I did add a medium diced apple in the saute process to boost the squash's sweetness, and I took a reviewers advice on adding a pinch of curry powder. I garnished my bowl with a dollop of sour cream as a contrast and yummm! Thank you so much for this recipe, I will deffinitely make it over and over again!

Salsa Chicken Rice Casserole

Pretty good, according to my daughter. I didn't use all of the rice, as it seemed to be too much, nor did I use all of the cheese - 4 cups of cheese means 1/2 a cup per serving. Even with the reduced amount of cheese, the top of the casserole looked greasy.

Serbian Ground Beef, Veggie, and Potato Bake

Pretty good, nice spices.(was a little worried about the cloves and cinnamon)I tried to follow the recipie exactly, but I didn't have wine, and replaced the crushed red peppers with garlic. I also did the potato part a little different. I sliced and boiled 6 med. potatoes, then arranged it like a shepards pie. That is what it was kinda like, but without the gravy, and next time I'll add flour and more cream to make it like that.

Chuck's Favorite Mac and Cheese

This was Great, it was tasty and even my picky eater (boyfriend) enjoyed it. The best part about this recipe though i find is how easy it was. My father makes a mac and cheese but it requires melting cheese in milk on the stove top, and that takes ages and also ends in a pot that needs alot of scrubbing each time no mater how much you try to keep it from burning on the bottom. Where as this recipe, makes very few dishes to clean, and those it does make are easy to clean. Also no need to be chained to the stove, simply cook pasta then mix everything togeather then stick in stove and walk away. i followed the recipe exactly, and was very happy with the results, next time i will use slightly less crumbs, but even as it was it was great! will be making again forsure!

Costas French Market Doughnuts (Beignets)

Never had these before and curiosity got the best of me! I halved the recipe, as several reviews stated that this made a huge batch! These are awesome, although I was expecting a little more sweetness in the dough. Didn't have Evaporated milk, so used Whole milk instead...these are awesome...so awesome that I am going to make these for the family potatoe pancake breakfast...I was trying to figure out what to make and low and behold I have found it!
