Slimmed-Down Potato Salad

This salad is flawless. I don't like mayonaise potatoe salad, but this one is light and delicious. I can't taste the tofu! It literally tastes like I used cream instead of tofu. Very good. Will make regularly from now on!

Serbian Ground Beef, Veggie, and Potato Bake

This was good! I totally forgot to add the cream at the end but I don't think it was really missing anything. Next time I might add a beaten egg to the meat mixture to keep it together. My boyfriend called it "Serbian shepherd's pie". My casserole dish is taller than most so I added a layer of potatoes in the middle. Next time I might double up on the spices to make it even more flavourful. I loved the unique taste though - will make again, thanks!

Glazed Pork Tenderloin

this was very tasty and very light. The only thing I did differently was to brown on all sides in my cast iron on stove and transfer to oven in the same skillet. I did not have fresh rosemary so substituted dried. It turned out really nice.

Where have these been all my life???? I have never heard of snickerdoodles before!!! I made these on Saturday - one batch and it made about 5 dozen cookies, it is now Monday morning and they are all gone!!! :) hubby and Jr absolutely hoovered them up! Thanks for the great recipe! Didn't change a thing and very easy to make...although I wonder why the cream of tartar is in them...I can't figure out it's purpose....

Brazilian White Rice

I made this rice to along with salmon last night and the end result was really good. I used half chicken broth, half water, but that is the only change I made to the recipe. The end result is nice, fluffy rice that does not stick together. The flavour was very subtle - it's really a nice switch from plain white rice.

Slow Cooker Chicken Taco Soup

I knew it had to be excellent to have so many good reviews. The only thing I changed was the diced tomatoes with green chilies - I can't for the life of me find these in CDN grocery stores, so I used a chunky salsa - still tasted great! I added sour cream, cheese and minced jalapeños. YUM. Oh, I also shortened my cooking time - 2 hours on high, 3 on low and in the last hour I shredded the chicken which fell apart basically on its own. Thanks for a great hearty and healthy recipe!

Great cookie! I baked for 12 minutes and they came out crispy but not crumbly. One problem, too much salt! I'd reduce down to 1/8 tsp instead of 1/2 next time I make these. The raw dough was a bit salty but I thought after rolling in sugar and baking this would go away, but it didn't. Still really good though!

Cinnamon Sugar Tortilla Delight

A very delicious dessert in under 5 minutes - how can you go wrong? Instead of microwaving these, I rolled mine (being sure to tuck in the ends) and fried in a bit of butter. Apart from the rolls unfolding a little when I turned them (I had to use a toothpick in each to keep them together), they turned out perfectly. Crispy and sweet, super yummy and very fast...we will definitely make these again.

Balsamic-Glazed Salmon Fillets

I made this for dinner for my family tonight and we all liked it a lot. It's got to be good when the 2 and 4 year old kids ask for seconds. I followed the recipe exactly with exception to the wine - I used 1 tsp of white wine vinegar and added 1 Tbsp of water to off-set the vinegar. I also added about 2 Tbsp of honey instead of 1. I served this with "Brazilian White Rice" from this site along with the salmon - the end result was delicious.

Chocolate-Covered Cherry Cookies

The dough was easy to work with, but I had a lot of trouble with the frosting. The frosting went chunky on me and add to be kept hot or it would not spread. They tasted pretty good.

Whole Wheat Banana Nut Bread

Decent recipe. Changed a few things. Instead of honey, I used a blend of white and brown sugar (honey isn't really making the bread all that much healthier anyways). For healthy changes, I added more banana, used applesauce instead of oil, and egg whites instead of eggs. I also added extra spices and put a bit of a crumble on top. Turned out pretty tasty.

Slow Cooker Cranberry Roast

For me, this combo of flavours is just wrong! I used beef for this, and in my opinion it completely ruined the flavour of the meat. Perhaps pork roast would be better, but I don't think I will be trying it. Very disappointed, as was my husband.
