Leftover Casserole

Reviewed: Apr. 14, 2009
This recipe is lacking serious instructions. What the author forgot to mention was to add 1 (8 ounce) package elbow macaroni - COOKED! If you follow the instructions given you will not be eating in 45 mins. I followed this recipe without cooking the noodles but felt because the noodles were uncooked it needed more liquid - so I doubled the milk.

Super Easy Jelly Doughnuts

Reviewed: Apr. 12, 2009
OK...these were kinda amazing!! I was home alone this evening...craving donuts...but it was too late to make them. I stumbled upon this recipe and I must admit, I was skeptical when I read it. Then, after reading the first few reviews I decided to give it a try. wow!! am I glad I did! They are AWESOME! they really taste like donuts. I did stray from the recipe slightly, cooking mine between 325 & 350 as they seemed to be cooking too fast on the outside at 375. I then put some white sugar in a bag and gave them a shake when they were done. Of course I couldn't stop at one...I've already eaten 3 and poured a big glass of milk. If you follow the directions, you will not be disappointed with this recipe!

Pork Tenderloin with Herb Sauce

Reviewed: Mar. 15, 2009
Like some others, I did this in the oven (350 for 45 min. was perfect). Also used 1/2 the sauce for a marinade and turned the rest into a sauce to pour over the pork when done. Used red wine vinegar and found it a bit too "vinegar-y' for our tastes, but overall this recipe is so easy that we'll try it again with the cider vinegar to see if results are different...

Chocolate Chip Cookies (Gluten Free)

Reviewed: Mar. 12, 2009
I was looking for a recipe that looked like my moms chocolate chip cookie recipe, not necessarily a gluten free recipe..So when making these cookies I didn't use any gluten free ingredients, just the ordinary ingredients, and these cookies turned out wonderfully. They looked just like the cookies in the picture and the kids love them. Soft and moist..Thanks for the great recipe..

Salmon Dip

Reviewed: Mar. 3, 2009
Fabulous! I made this with what I had on hand which meant omitting fresh parsley & pimentos. I also forgot to add the butter. I put this in a small casserole, topped with a sprinkle of parm and baked for 15 mins @ 350. It was a delicious hot dip. I used tostito scoops and crostini. Excellent!

This is soooooo good!! Made it as directed by originator, did not change a single thing and it was great. My husband told me he would pay for this in a restaurant. That, in itself, says a lot.

Cheryl's Spinach Cheesy Pasta Casserole

Reviewed: Jan. 24, 2009
We like this very much. My kids both ate it and my daughter was especially happy as she is vegetarian. I didn't make any intentional changes b/c I thought the recipe would work well as is. But I only had rotini on hand, so I used that instead of shells. Also, I used a canola/olive oil blend, seasoned bread crumbs and a combination of kraft 4-cheese italiano and cheddar. Spinach- cheese - tomato sauce recipes do not typically need a lot of additional spices and flavour. The point is to taste the spinach and not be distracted by other flavours that might over power.

Apple Muffins

Reviewed: Jan. 20, 2009
I made these for a get together with friends. The adults adored them but toddlers were into other treats. They worked great with old apples that were soft on the outside but still solid enough to cut up on the inside. ALSO I substituted a light olive oil instead of butter and they turned out perfect, I imagine any light vegetable oil would work. I did half whole wheat flour and half regular flour. I think when we were kids we would help and dip the muffin tops in melted butter and then the sugar mixture for extra decadence but the light amount of sugar used by dipping the warm tops worked perfect for me and my friends today. thanks mom

Sicilian Meat Roll

Reviewed: Jan. 15, 2009
This looked like it might be a challenge to put together, but it turned out to be so quick and easy! I used Canadian bacon instead of ham, upped the garlic and added onion powder to the meat mixture as well. This was a real hit. Next time I may even add some sauteed spinach, mushrooms and roasted red peppers to the filling.
