Delicious Apple Sauce

Easy tip - don't bother shredding the apples! Just peel and chunk them as you would for a pie and when they start to soften use the potato masher!! Depending on your apples and how juicy they are, you may need to add more or less water. I used the full amount of cinnamon and sugar and the applesauce turned out absolutely delicious. Try it on top of bran flakes in the morning (still add your milk) for a wonderful-tasting healthy fibre-rich breakfast!

Praline Sundae Topping

Creme Brulee French Toast

Excellent! I went over the top, if possible with this recipe, by using croissants (sliced in half). I also added some nutmeg and orange juice, used triple sec for the liqueur.

Strawberry Vanilla Pancakes

These were good- I used half ww flour, half white, and 1/2 tsp salt, and no oil. I do think that there was too much strawberries though- it made the cooked pancake seem raw it was so gooey with berries...next time I will only do a 1/2 cup. Yummy though, thanks.

Zucchini Brownies

A-MAZ-ING!!! Although, lol, I did add a couple tbsp of milk to the end batter as it was really really dry, I could hardly mix it. Anyways, it turned out great, and bravo to the icing! Tasts just like the jar kind! Definatley a keeper!

Mexican Casserole

This is an excellent starter recipe, it's very versatile which I love. I cooked my chicken, added garlic salt and chopped onions. Then added the taco seasoning, creamed corn, red kidney beans, mild salsa, 1 cup of rice, and 1/2 cup of sour cream. It's delicious! I plan to rip up a tortilla as suggested by another reviewer as I don't have taco chips, and then add some shredded cheese. It's huge! It is a tad spicy, so next time I will only add a tbsp of taco seasoning. I would definatly not put in a whole package unless you like it really spicy. Thanks!

Aussie Chicken

This was really good and I'll make it again. But the sauce was kind of expensive to make, so next time I might just buy honey mustard dressing as I thought it tasted the same as boughten. I omitted the corn syrup based on other reviews. Also, don't cook the back too much before hand as it crisps up more in the oven, and the cheese should be added closer to the end as it kind of hardened on the top..BUT still good :)

Vanilla Brownies

I had read all reviews- good and bad, and I really wanted to be on the side of all those that rated good...but I cannot. These DID NOT turn out for me. It took forever to cook (using an 8x11 which someone suggested worked good for them)so I had to burn the outside to get it to cook. Then when it did cook, it was like glue on the inside. NEVER making these again. Sorry.

Playgroup Granola Bars

These are really good and healthy, too! So much better than the preservative laden, air filled granola bars in the grocery stores. I made mine with some chocolate chips and pecans, sliced them up, wrapped them then froze them for school lunches. If my husband stops eating them then we actually might have some left for school. :)

Brazilian Black Bean Stew

I was hoping for a taste sensation when I made this, but it needs a little work in the flavour department. I bumped up the salt, I added some more heat in the form of tabasco, and I also added some cumin. It is a very eye catching dish, but as written a little on the bland side.

Chocolate Chip Muffins

I halved the recipe to make 6 muffins, enough for 2 each for breakfast. They were on the smaller side in comparison to muffins I've made previously, but still enjoyable. I worked them out to be 198 calories each when using the following: 5 oz sifted white flour, 50g sugar, 1.5 teaspoons baking powder, 1/4 teaspoon salt, 1/3 + 1 T skim milk, 2 T oil, 1.5 T egg, 30g chocolate chips, 6 teaspoons unpacked brown sugar for sprinkling on top. Mine cooked for 19 minutes and barely filled 6 muffin cups 2/3 full, but they did rise up well.

Curry-Coconut Shrimp

This is a 5 star recipe with similar changes to another reviewer. I made a paste out of the onions, red pepper, garlic, ginger and oil, sauteed the paste, added the spices and a TBSP of flour and cooked for a few more minutes stirring to blend. Added the coconut milk and simmered it until slightly thickened and added a bit of salt for flavour. Added the shrimp and the cilantro, removed from heat once the shrimp was cooked through and served it with brown rice linquine. Absolutely superb!! My hubby was a happy man.

Wonderful! I was in a rush, so I didn't have time to freeze and grate my butter. I did it the old fashioned way and cut it in with a pastry blender. They turned out perfectly! Some of the best I've ever tasted

Rhubarb Cake I

Don't try putting it into muffin cups. The batter is too cake like and not muffin like for that. They overflow and make a mess. Next time I will put it in the proper pan. Only change I made was adding a cup more rhubarb and topping it with a bit of cinnamon sugar. Very moist.
