Apple Pie by Grandma Ople

Just wanted to add yet another five star rating to a very deserving recipe!! I have never tasted anything like this pie. It is delicious exactly as is, but we also like it in a deep-dish shell piled high with apples so I use 1 1/2 recipes of the caramel with the added vanilla as suggested. I like lots of pastry, so I mix the caramel in with the apples (sometimes I add 1 tbsp of cinnamon, sometimes I don't) and top with a full crust. Yes, this bubbles over - use a tray underneath to save your oven. Absolutely to die for!

Black Bean and Rice Enchiladas

Wow! I expected good, but I didn't expect amazing. I really loved this recipe and followed it exactly for the filling. I found that it filled nine tortillas nicely and could only fit 6 comfortably in the 9x13 pan, so I put the other 3 into a smaller casserole dish. I used the whole cup of cheese on the larger pan though, so ended up using 1 1/2 cups total - same with the salsa on top. I used fat-free tortillas though, so the calorie-count ended up pretty much the same even with a little extra cheese! Thanks for the delicious and very healthy recipe!

Pizza Dough III

I am a cooking dummy, but this recipe is so easy, even I can do it! Plus it's so quick that when my husband spontaneously craves pizza, I can whip it up by suppertime!
