I'm the mother of three young children. I'm now a stay-at-home mom, but prior to the birth of my youngest child, I was working full-time in Corrections. I love the outdoors and my family and I enjoy hiking, camping, horseback riding, travelling, picnics and barbecues. I'm a huge hockey fan and I love the arts as well, particularly musical theater.

Smoky Mountain Chicken

Pretty good. I didn't use the italian seasoning, though. I substituted seasoning salt and used hickory flavored bbq sauce...and coated each piece of chicken individually prior to baking. Next time I'll try this with a spicy bbq sauce and pepperjack cheese. Definately worth making again!

Never Enough Green Bean Casserole

Very simple and tasty recipe! Perfect quantity too as it's best fresh from the oven. I found the leftovers a little soggy the next day, but this is definately a recipe I'll be making again.

Granny Kat's Pumpkin Roll

This is absolutely fantastic and oh so simple to prepare! I was a bit nervous about turning out and rolling the cake, but I followed the recipe exactly and it turned out perfectly. I did find however that when I had finished the roll, I had enough pumpkin (I just used a small can of pumpkin puree) and enough of the cream cheese mixture leftover to make another roll. I found the 9x13" pan size was perfect once I sliced the roll, so next time I'll stick with the 9x13" inch pan but double up on the batter and make two rolls instead of one. Yummy! Thanks so much for sharing your granny's great recipe!
