Special Banana Bread

Reviewed: Dec. 1, 2009
I *love* this recipe! I throw this together often, the only changes I've made are wholewheat flour, a splash of vanilla, and I use real butter & pecans. This always turns out SO DELICIOUSLY MOIST. Seriously, I can't get enough of this wonderful banana bread recipe - thanks so much for sharing it! <3

Seven Layer Taco Dip

Reviewed: Dec. 1, 2009
This turned out great!! I cut the recipe in half and made two pie plates, one spicey, one not. For the spicey one, I mixed 1/2 can green chillies with 1/2 the taco seasoning into the beans and spread in the bottom of the pie plate, mixed the cream cheese and sour cream, 1/2 the taco seasoning, 1/2 can green chillies and spread that on the bean layer, spread the salsa next, layered cheddar cheese and jalapeno monerey jack, then diced green onions and diced tomatoes, sliced olives and diced sliced jalapeno pepper. Baked in oven at 350 for 30 minutes and served with toasted baugette slices and assorted crackers. It was a huge hit!! Thanks for sharing your recipe!!

One Dish Chicken and Rice Bake

Reviewed: Dec. 1, 2009
I liked it! Needed a lazy way to get all of the food groups in. I diced my chicken, and also added about 1.5-2 c frozen broccoli flowrets. I didn't have paprika but used chili powder instead. Surprisingly good and minimal effort :)

Crusty White Bread

Reviewed: Dec. 1, 2009
This is a terrific and easy recipe. I made this recipe one evening, and let the loaves sit on racks in their pans overnite. The next morning I noticed that the loaf bottoms were a little soft and moist; so I put them on a pizza stone in the oven @ 400 for about 15 minutes to crisp up the crust. Otherwise, don't change a thing! Thanks for a fail-safe bread recipe!

Sausage Potato Casserole

I'm giving this recipe 3 stars because I think it's a great jumping off point. I did the recipe pretty much as is, and I found it a little bland. I think it needs a little something more, some heat or something. Definitely worth experimenting with.

Valentino's Pizza Crust

Reviewed: Nov. 30, 2009
Very simple, delicious recipe. Sprinkled sesame seed on the counter and placed the dough on top, using oiled hands I made a 6" diameter round (I have a pizza pan with the holes, if I had a stone or a solid pan this could be done on it). I used white cheddar, garlic, hot banana pepper and mango for the topping, it was excellent and the hour it took to put together was no longer than it takes the local pizza place to deliver. Thank you!

Hot Feta, Artichoke and Roasted Red Pepper Dip

Reviewed: Nov. 29, 2009
Overall, the dip recipe is pretty good but I made a few modifications. First, I added only 1 cup of feta and replaced the 1 cup of mayo with 1/2 mayo and 1/2 cup of sour cream. I also added some sharp cheddar cheese, green onions, and olives. If you put the artichoke hearts into a food processor, you get a nice smooth, creamy dip texture.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Nov. 28, 2009
We really enjoyed this! A definite 'do over'. Might go less on the cream as it took a while to reduce. Also, it is very rich so it is not something we would have very often. I tasted before adding the cream and it would be good that way on the pasta as well! First time I've made a real cream sauce and this is restaurant quality that I can do at home.

Tuna Snack Spread

Reviewed: Nov. 28, 2009
Soo good! I was looking for a dip/spread to make with tuna and cream cheese and found this... Exactly what I wad craving! I read other reviews and took the advice and used two cans of tuna... If only used one I think the cream cheese would be too over-powering! Delicious and easy to make!

Sugar Cookie Icing

Reviewed: Nov. 28, 2009
This is the best icing!! I used it plain white to decorate my gingerbread, and it turned out GREAT! The outside set quite quickly, (while we were still decorating the other gingerbread,) but still stayed soft on the inside for four days sitting out uncovered. I did have to add more milk because it was too dry at first, and changed it to vanilla extract instead of almond because my boyfriend prefers vanilla. I will definitely use this recipe again. And again. And again! ;)

I made this immediately after reading reviews on it. As one reviewer suggested, I used 1/4 cup of kernels, 1 tsp oil and 1 Tbsp sugar to make Kettle corn. Popped it for 2 minutes and now I am enjoying it as I type! Great, quick snack!

Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Nov. 28, 2009
I thought this salmon topping was delicious. I will use a better cut of salmon next time. I was only cooking for 2 so I halved the recipe. Next time I will try and coat both sides of the fish and see how it turns out on a grill.
