Tuna Snack Spread

Soo good! I was looking for a dip/spread to make with tuna and cream cheese and found this... Exactly what I wad craving! I read other reviews and took the advice and used two cans of tuna... If only used one I think the cream cheese would be too over-powering! Delicious and easy to make!

Sugar Cookie Icing

This is the best icing!! I used it plain white to decorate my gingerbread, and it turned out GREAT! The outside set quite quickly, (while we were still decorating the other gingerbread,) but still stayed soft on the inside for four days sitting out uncovered. I did have to add more milk because it was too dry at first, and changed it to vanilla extract instead of almond because my boyfriend prefers vanilla. I will definitely use this recipe again. And again. And again! ;)

Microwave Popcorn

I made this immediately after reading reviews on it. As one reviewer suggested, I used 1/4 cup of kernels, 1 tsp oil and 1 Tbsp sugar to make Kettle corn. Popped it for 2 minutes and now I am enjoying it as I type! Great, quick snack!

Alaska Salmon Bake with Pecan Crunch Coating

I thought this salmon topping was delicious. I will use a better cut of salmon next time. I was only cooking for 2 so I halved the recipe. Next time I will try and coat both sides of the fish and see how it turns out on a grill.

Cream Cheese Christmas Cookies

These were really yummy! My only addition was that I added about 2 of 3 tsps of Almost Extract as well. I got RAVE reviews at our Christmas Tree Decorating Party! This will be added to my holiday favorite recipes for sure. Thanks for sharing :)

Tofu Peanut Stir-Fry

Delicious! My husband couldn't stop raving about it. I just made a few revisions -- I didn't have any tofu on hand, so instead swapped in 3 vegetarian chicken breasts. I used flour instead of cornstarch, and less than a 1/4 cup of oil, as a 1/2 cup seemed like too much. I also added some fresh red and yellow peppers and water chestnuts to the frozen veg mix. Turned out fabulous!!

Turkey in a Bag

I have been cooking mny turkeys in a bag sonce before forever. Every year I am tempted to try anothier method, but when it comes down to it, WHY MESS WITH PERFECTION! This is always, always, always good. If you are not interested in displaying the turkey at the table, try roasting it breast side down, You will not believe how wonderful the breast meat becomes. And there is plenty of juice for a wonderful gravy! Try this and I guarantee you will never do it any other way.

Brown Sugar Meatloaf

this was soooo good! i would have given it 4.5 stars if i could. i did like the others suggested and added 2 teaspoons of worcestershire sauce. the taste was perfect! the meat was delish, the ONLY thing i didnt like was that there wasnt enough sauce. my husband said to put this on the menu so next time i make it ill double the brown sugar and katchup (and worcestershire sauce). thanks for a really great recipe, im sure this will be one that my own kids will ask for when they are all grown up :)

Insanely Amazing Jalapeno Cheese Dip

This was AMAZING!! I used the 1/2 mayo (fat free) 1/2 sour cream (fat free) combo, added some chopped garlic, 2 cans crab meat, and used light cheddar cheese, and the jalapenos, parmesan cheese, green chillies...baked in a little casserole dish for 30 minutes, served bubbling and hot with olive oil brushed and toasted baguette slices and assorted crackers. It vanished in record time!! Thanks for sharing your recipe Happywife!!

This turned out excellent! I mixed the ingredients together (omitted the olives, used extra basil, seeded the tomatoes, only used half the feta called for) and added some salt and pepper. I let it meld together for several hours. Ran out of time to bake individually, so served it cold along with olive oil brushed and toasted french baguette slices. Everyone raved!! Thanks for sharing your recipe!
