Crunchy Peanut Butter Balls

I make these every year for my cookie platters to rave reviews ......I have developed another version that is not as sweet and has a different look inside. 3 cups of peanut butter, 1 1/2 cup marshmallow and 2 cups chocolate wafer cookie crumbs. mix, chill and dip.

Blonde Brownies I

Very easy to make, in fact no need to drag out the mixer. I used chopped cashews in lieu of walnuts, and used about 1/3 cup of whole wheat, because in sweet baked goods you can do this without ruining the flavor. Perfect moistness, with a little firmness.

The Ultimate Chili

I don't add as much brown sugar, maybe just a sprinkle at most. I add more of the spices too. Everyone loves my chili! I serve it with buttermilk corn bread.

Artichoke & Spinach Dip Restaurant Style

So quick and easy to make. I brought this to a potluck dinner as an appy with some slices of crusty bread, bread sticks and pita triangles and I was surprised that everyone (7 people) devoured it to the last bit. I only used half of the cream cheese and felt that it was rich and creamy enough. As for the alfredo I used a roasted garlic and parmesan alfredo, and it combined very well. I added 5 cloves of freshly roasted garlic too.

Acorn Squash with Apple

I served this to a group of picky eaters at Thanksgiving, and they all loved it. In fact, some of them thought it was almost dessert-like. What a great side dish. I will make making this again at Christmas for sure!

Awesome Sausage, Apple and Cranberry Stuffing

I omitted the liver and made this with a vegetarian sausage and vegetable broth. (I increased the broth, because I read reviews of it being dry.) It went over very well with all my meat eating inlaws. I made this a second time without the sausage and it too went over very, very well. Of course I'm sure my version is nothing compared to the real thing with actual turkey sausage.

Hummus III

Very good. I added half a cup of sundried tomatoes and some of the oil. Also added some crushed red pepper flakes (about a tsp). I'll probably experiment with other ingredients like roasted red peppers or some jalapeno peppers next time.

Crema de Calabazines

Used soft cream cheese instead of velveeta and it was super tasty and made a fast cream of zucchini soup on a busy week night.The other change was adding a Tbsp of beef bovril bouillon since i had no chicken bouillon powder. My 2.5yr old son and I enjoyed it.

Great recipe! Was the first thing to disappear at our work holiday open house. I used very little mayo and mostly spreadable cream cheese (in the container). I forgot the green onion and it didn't even need it. I cut the fat off the bacon before cooking for less fat and more protein and also used kitchen scissors to cut versus crumble the bacon. I cut the tops and bottoms off my cherry tomatoes as they didn't stand up. BUT I used small muffin paper cups to hold them which made them easy to pick up and was a nice display. Try to find the largest cherry tomatoes you can find and grab the man in the house to help with the coring of them!

Chocolate Chip Cheese Ball

This was a hit at our recent department open house. I definately recommend serving with the Mr. Christie chocolate wafers vs. graham crackers. I let the cheese ball sit for 24 hours before rolling in the walnuts and the flavours came together perfectly. I would also suggest using a mix of milk and dark chocolate flakes instead of chocolate chips to make this a more 'spreadable' treat.

Spinach Dip with Water Chestnuts

I love this recipe and so does everyone else I serve it to. The water chestnuts add a perfect light crunch. I always serve it in the hollowed out the center of a sour dough loaf with a sliced whole wheat baguette on the side. Delicious!

Double Tomato Bruschetta

Great recipe. I brushed the bread with olive oil and broiled as others have mentioned. Made the tomato mix the night before using canned diced tomatoes and sprinkled with 4 cheese-blend. They didn't last long at our dinner party!

Super easy and pretty quick! I used half semi-sweet and half milk chocolate that was leftover from a batch of billionaires, but that was fine. I couldn't quite get the swirls looking as artistic as the photos uploaded, but I will do better next time!

Bran Muffins a la Brian

Loved it!! I used whole wheat flour and I only had white sugar so I put in more molasses...perhaps a lot more. I LOVE it. It's not dense even though I used whole wheat. They're so light and fluffy and rich. I love the molasses flavour. Oh ya...no raisins in the house, it's sweet enough without them!!
