Sweet Candied Orange and Lemon Peel

After playing around with this recipe a couple times I found that blanching the peels 3 times for 10 minutes each worked well. I simmered the peels in the sugar syrup for 45 minutes....keep an eye on the pot, so they do not dry out. I'm on the "keeping the pith on" team. These will make a great addition to any Christmas plate.

Red River Beef Stroganoff

Good, fast dinner that everyone loves. First time I made exact as written....good. Second time I used ground beef, a little wine and cream of mushroom soup as I was out of sour cream..... really good.

Granny Kat's Pumpkin Roll

Made this on Halloween for a dinner party, everyone went crazy for it. I add walnuts to the cake as well as vanilla extract, extra cinnamon and nutmeg. Took another reviews suggestion and add orange zest and juice to the filling...really gave it a nice flavor especially when it sits overnight.

Sam's Famous Carrot Cake

I'm not a carrot cake lover but everytime I make this people go crazy for it! I have a few changes......I toast the coconut and walnuts first. Add the zest of 1 lemon ( have tried orange zest but get a bigger reaction to lemon ). 1/4 tsp. of nutmeg and I split the sugar..... 1 cup brown and 1/2 cup white. I like making mini cupcakes, this recipe makes alot perfect for potluck or meeting. Mini cupcake bake for 13 to 14 minutes.

Lemon Sugar Tea Cookies

A good cookie, added 1 tsp of vanilla extract as well as 2 tsps. lemon zest. I found if you chill the dough over-night the lemon flavor is much better.

Cranberry-Pumpkin Cookies

A real crowd pleaser! Turned out better than I'd hoped they would. Used Craisins each time and changed the spices a little....1/2 tsp. cinnamon and 1/2 tsp. pumpkin pie spice. For a glaze I used another reviewers suggestion of icing sugar, melted butter and orange juice.

Chewy Coconut Cookies

Love these cookies, great tasting and last for days if you can hide them from family and friends! I took other reviewers suggestions and toasted the coconut as well as add 1 full tsp of vanilla. After making several batches I puchased coconut extract and add 1/4 tsp....what a huge difference in the taste. For the top of the cookies I either sprinkle sanding sugar before baking or drizzle with melted chocolate when cookies are cool. ( taste like a Mounds bar ) Also made a batch with walnuts, raisins and chocolate chips which were very good. These cookies will be in my Christmas baskets for sure.

Black Magic Cake

Awesome cake! Super easy to make just added 1 tsp on cinnamon and double the vanilla extract. Used the Hard Chocolate Glaze from this site which finished it off perfectly. Took it to my garden club meeting and it was gone in seconds, same thing when I took it to work. Make sure you bring the recipe with you, everyone asks for it.

Roasted Butternut Squash Soup with Apples and Bacon

Excellent soup, will make again. Added a leek, only had apple juice... which I think made the soup aliitle too sweet for me but my husband loved it. Next time I will try the apple cider. Was scared about the 2 tsps of curry but went for it and it was great. Instead of the sour cream ( didn't have any) I blended 3 tbsps cream cheese into soup. Very creamy without being over powering. I roasted the squash the night before which really cut down on the prep time for the next day.

Peanut Butter Popcorn

Great snack!! I used air popped poppcorn & i had to add m&m's and its now like a reeses flavour. i have another recipe for marshmallow popcorn, and do recomend putting in the oven to dry it out, although i only do it for a short time as i like it a bit chewy. Thanks for the recipe!!

Three Cheese Manicotti II

I followed this best I could, that is I made it my own, i used my food processor and in with the ricota and mozza went half pack of thawed spinich drained and 2 cooked chicken breast from the night before. I then stuff cooked manacotti tubes and use one jar of sauce. covered with remaining cheese and baked. It was great! The only thing I am going to change next time is using 2 jars of sauce.
