Chicken Breasts Pierre

It was alright.. Definitely a different kind of flavour. It's edible but the flavour was lacking. I added a ton more garlic and 1 can of tomato paste to up the flavour.

Grandma Ople's Apple Pie

Reviewed: Nov. 16, 2009
I had about one crust's worth of extra dough so I thought I would try these as little tarts. I added some cinnamon and cardamom to the apples (Granny Smith only) as suggested. I'm not sure why but my brown sugar/butter sauce turned out very thick and I had a hard time pouring it over the mini tarts. I would suggest perhaps a smaller amount of brown sugar which helps lighten the pie. Instead of a lattice, I cut small circles (about the size of a spice container lid) and topped the apples with these. I then drizzled the brown sugar/butter sauce over the tarts. Other raters have said to mix the 'sauce' with the apples, but after taking these out of the oven (MUCH shorter cooking time of about 25 minutes total) I have to say that the caramelization of the sauce over the little pastry circles looked glorious. I used the rest of the apples (I used 8) in an apple crips in my Pampered Chef mini stone baker and topped with oats, brown sugar and butter for another tasty apple treat. Baking time for tarts: 425 degrees for 10 minutes 350 degrees for 15 minutes Remove and cool on wire rack!

Bean and Tomato Stew with Sage

Reviewed: Nov. 11, 2009
This dish tastes absolutely fantastic! Only complaint that I have is that it doesn't feed four! I used a 19-oz can for both the beans and the tomatoes, and it only fed me 3 times :( haha looks like I'll just haveto make it again! Thanks

Slow Cooker Chicken and Dumplings

Very simple, and a good recipe, thank you. We only used one can of refrigerated biscuit dough for dumplings (we made the dumplings very small)--it made plenty so we baked biscuits using the second can.

Super Duper Bean Salad

My husband loved this. I omitted the lima beans, and my husband requested that the next time I make this that I only put in half the called for amount of garbanzo beans, and to make enough dressing for the beans to be completely covered by the liquid.

I'm sure it was my fault that I used Japanese rice because it turned out really mushy. But the flavour was good.

Banana Chocolate Chip Cake

Reviewed: Oct. 6, 2009
I live in japan and don't really have access to alot of easily accessible baking goods like I did back when I was home in Canada so when I found this recipe, I had all the ingredients on hand except the choco chips but desperately needed to use my two ripe bananas. One ingredient that I took with me was good ol baking powder but didn't think about bringing soda thinking they would have some here but boy was I wrong. So finding a recipe with baking powder was also a mission. You also may not know this but we don't have ovens here, none of the apartments or houses come with one , it's like a luxury here so I rely on my Oster oven. I was pretty worried about using the baking powder since everyone was posting about using soda instead but I had faith in this recipe. I made it with little exceptions besides adding some vanilla and a scoop of peanut butter since I didn't have any choco chips. Baked it in a small round cake pan I think it's around 8 inches and it turned out pretty good! I would probably give it a 5star when I make it next time with choco chips and more bananas! Great recipe though!

Easy Indian-Style Chicken

So good and so easy! I made this in 15min! Yum. I did modify it to my liking and increased the recipe. I used 4 chicken breasts, 1 (400mL) can of coconut milk, 1 (156mL) can of tomato paste, ground cumin, turmeric, curry powder, and the addition of peas and lentils. Everyone loved it!

Focaccia Bread

Reviewed: Sep. 20, 2009
Fantastic, easy recipe for focaccia bread! Loved that it only took an hour from start to finish. Only downside is that the loaf only lasted a day!! Based on previous bread making experience and previous comments, I made sure that the water was warm, between 120 - 130 degrees Farenheit, when I added it to dry ingredients. As I was using Fleichmann's Quick Rise Yeast, I did not need to proof the yeast. As well, I omitted the cheese and instead brushed the top of the bread with olive oil and topped with rosemary and sea salt. Got great reviews from my roommates. Will definitely be making again!

Shepherd's Pie VI

Reviewed: Sep. 3, 2009
A very good base recipe for shepherd's pie! I've never made it before but I think it turned out beautifully. I have a certain way of making my mashed potatoes so I made it that way with the addition of baby dill. But I did follow other reviewers' advice and added Worcestshire sauce, beef gravy, and more ketchup. Comfort food at its finest.

Chocolate Chip Cookie Ice Cream Cake

Reviewed: Aug. 30, 2009
Thank you for this wonderfully versatile recipe! I made a variation of the cake using graham cracker crumbs for the base (because we had 9oz of them in a bag that needed using up), chocolate brownie cookies for the sides, brownie chunk ice cream, dark chocolate fudge topping and chocolate pocky. (Pocky are a Japanese treat, thin pretzel sticks dipped in chocolate or an endless variety of other sweet and savory toppings. They're not too hard to find in North America though - I found that 3 small 40g packages were more than enough.) I put a layer of pocky on top of the first layer of ice cream, then sliced and flattened the remaining layer of ice cream so that I could arrange another layer of pocky on top. I put this in the freezer for a few hours and then drizzled the hot fudge over top and froze again for another hour or so. The end result went over very well with the kids, though I personally was not happy with the base which I found salty (probably should have used unsalted rather than salted butter). However, everyone liked the ice cream cake a lot. This was my first attempt at an ice cream cake and I think we will be making it again quite often, since there is so much variety possible.

Vegetarian Four Cheese Lasagna

Reviewed: Aug. 25, 2009
Although I did not follow the recipe exactly, this recipe serves as a great base recipe for vegetarian lasagna! For my lasagna, I used eggplant, zucchini, tomatoes, and spinach. I also only used ricotta and feta and did not use any other extra cheeses as it is much too rich for my liking. This was my first time making a lasagna and it definitely was a hit! Next time I will use the intriguing ingredient of pumpkin if I have it on hand.

Spinach Salad II

This was the first time I ever made a spinach salad (it's not something I like), but my husband and mother-in-law gave it rave reviews. In fact, my husband ONLY ate the spinach salad for dinner that night...usually I can't get him to eat ANY salad with his meals.

Streusel Topped Blueberry Muffins

Reviewed: Aug. 24, 2009
A great blueberry muffin that exceeded my expectations. The only thing I changed was to use half brown sugar and half white sugar for the streusel topping. My baking time was also adjusted as well: 10min for mini muffins and 15min for regular-sized muffins.

Garbanzo Stir-Fry

Reviewed: Aug. 19, 2009
This dish tasted fantastic, once I tweaked it to my liking :) I added 3/4 cup of onion, and sauted it with 3 garlic cloves in just 1 tbsp of olive oil. Once that browned up a bit, I added fresh grated ginger :), then I cooked the recipe accordingly. After everything cooked up nice and hot, I added a pinch of salt and pepper. ALSO, your nutritional info is WAY off. Cal - 206; Total Fat - 6g; Carb - 32g; Fibre - 9g; Sugars - 2g; Protein - 9g

Melt-In-Your-Mouth Meat Loaf

Reviewed: Aug. 18, 2009
This is the first time that I ever made a meatloaf in the crockpot. Itt turned out rather delicious. I was worried at first when the instructions stated to place the meatloaf in the crockpot and then turn it on. I wondered how it would cook with no liquid but it cooked with its own juices. We had it for two nights in a row. Last night we ate it in a sandwich because we returned home rather late after a busy day but tonight we ate it with mashed potatoes and creamed corn. Boy was it ever good. I will most definitely make it again. Thanks for the recipe Suzanne. I also made two changes instead of dry minced onions I chopped a half an onion and I also chopped a 1/4 cup of green pepper. Very good!

Healthy Banana Cookies

Reviewed: Aug. 17, 2009
Yep, it definitely is a healthy, sugar-free cookie! It's still pretty good though. I did follow other reviewers' suggestions (adding honey, cinnamon, raisins, and cranberries) and it did add more flavour! I will probably be adding more cranberries and honey the next time I bake them. Took me about 15min and they were just on the edge of burning. So I'm thinking maybe 13-14min for next time.

Oatmeal Peanut Butter Cookies III

Reviewed: Aug. 11, 2009
Excellent peanut butter cookie recipe - best I've tried so far. Read previous comments and doubled the cookie recipe, but not the filling. Glad I did, as my boyfriend thought the cookie sandwitches were good, but preferred the cookies, sans filling. As well, only baked the cookies for 8 minutes. this way, they stayed really soft and chewy after they cooled. Ended up using half of the cookie batter and froze the rest. Just finished making cookies from the frozen dough. The dough froze really well and the cookies turned out great. Again, made half into sandwitches and the other half as 'regular' cookies, as we prefer the 'regular' cookies oven warm, but the cookie sandwitches are much better cold. This will become my standard peanut butter cookie recipe.
