Lebanese-Style Red Lentil Soup

Swedish Chocolate Balls (or Coconut Balls)

These were great and very simple to make! I coated mine with icing sugar.. quite festive :) Reminded me of snowballs. The only thing I had trouble with is that the dough wouldn't stick together at first for me. But I just popped the mixture into the deep-freeze for 30 minutes and all was well!

Hamburger Stew

This was a good start but it was quite flavorless so like a previous reviewer I added 3 packets of beef OXO and for my own personal taste I also added 3/4 Cup of Salsa. I was out of potatoes but replaced them with hash browns and it came out like a wonderful chili without beans! Served with a dallop of sour cream.

Yummy Bok Choy Salad

This recipe deserves five stars just for the dressing. Simply delicious. I actually just had this dressing with just the bok choy, none of the other stuff. And I used regular bok choy as that's what I had but it's not bitter at all. I scaled the recipe down to one serving.

This was my first experience with making popovers, and I'm happy to report that it was a good one! Followed the directions exactly except I used cooking spray and heated the pan in the over for approx 30 seconds. A great breakfast option!

Make-Ahead Spinach Manicotti

I really liked this.. I made it twice, once as written and then a second time when I changed a few minor things: I used fresh onion and garlic in the Manicotti and then added some fresh basil to the sauce. Simply because we enjoy that extra flavors... the manicotti was still good as written. I used a ziplock bag with a hole in one corner to fill the shells.. it work great! I had a double recipe filled in 5 minutes flat. I also had about 1/4 cup of filling left, so I just added it into the sauce. Kinda fancy, but simple AND yummy... Definitely will be making this again!

The Best Rolled Sugar Cookies

These are by far the best sugar cookies I have made. They are a favorite of my 3 kids. They are soft, and remain that way as long as they are stored properly. They're fun to decorate too!

Banana Pumpkin Bread

oh heavens is this good ! I used a miniature loaf pan that turns out 8 small bread loaves and cooking for 25 min made them just perfect ! I also baked a full loaf for the time specified in the reciped and it also turned out lovely. These little darlings will go in all my Xmas presents this year. For now they are snuggled up in my freezer while i enjoy the smells of the season the bread left in my house. I added a touch of Ground Cloves and instead of nutz i put in orange flavoured Craisins. HOORAY !!!

Whipped Shortbread Cookies

They were good, but I did find them to be quite dry. Looking at all the previous reviews, it was probably something I did wrong. I don't have a mixer (not even a hand mixer!) so I had to do all the whipping by hand, and maybe it just wasn't enough? Regardless, I won't be making them again.

Easy, Cheesy Zucchini Bake

Used this as a base for an excellent dinner! We make our own spaghetti sauce so first we sauteed 2 cloves of crushed garlic and 2 tbsp chopped spanish onion in a tbsp of extra virgin olive oil. Added ground turkey and browned. Added 1 cup shredded carrots and 2 medium tomatoes cubed. Spices added: 1 tbsp basil, 2 tsp oregano, 1/4 tsp thyme, 1 tbsp dried crushed chili peppers, plus salt and pepper. Simmered for 15 minutes. Layered in pan as per recipe. Baked for 30 minutes. Added cheddar, mozarella, romano and parmesean reggiano cheeses, increased oven temp to 400 and baked an additional 15 minutes uncovered to brown. This was excellent and VERY filling!!

World's Best Lasagna

YUM! First time making lasagna so I wasn't surprised it took so long. I followed the recipe exactly except that I couldn't find sweet Italian sausage so I used mild, and I put grated mozzarella on top instead of sliced. Also I think I used more mozzarella than the recipe called for. I didn't add as much salt because I prefer to let people add it themselves. This was SO GOOD and I'm making it again for my family on Christmas Eve.

Mouth-Watering Stuffed Mushrooms

Made these last night as an appetizer and they were gone in a flash! I accidentally added a bit more cayenne so they were quite spicy but delicious. I used tiny mushrooms which were a huge pain but looked nicer on the plate. Because they were so small they barely needed 15 minutes in the oven. I followed the recipe exactly but next time would add green onion just for colour. Will make often, thanks a lot!

Easy Pasta Fagioli

I changed things up a bit for my family's tastes and what we had on hand. I sauted about a tsp of minced garlic in oil for about a minute, then I added 2 cans of chicken broth and a little over a cup of meatless spaghetti sauce. I also added some dried basil, pepper, and a couple shakes of dehydrated onion flakes. I let it simmer for a few minutes, then I added 1 can of drained garbanzo beans and ½ can of drained black beans. I pureed the rest of the can of black beans with some of the soup and then stirred it into the soup (it helped to thicken and improve the texture and colour of the soup). I let that simmer for another ten minutes, then I added a couple cups of a frozen pasta-veggie blend (mini bow ties, peas, carrots, corn). Ten minutes later, dinner was done and made extra-tasty with some parmesan. It was very similar to minestrone and quite delicious. Thanks for sharing, Cindy!
