giving this a 5 with changes: use the infused olive oil on this site, but add a clove of crushed garlic to the infusion. finish it with red pepper flakes and parm, even serve it chilled! will definitely make again, thanks!

Apple Muffins

Reviewed: Jul. 5, 2008
really good, healthy recipe! needed just a little bit of tweaking to be perfect: I used 1/2cup raw sugar, 1 whole egg, double the cinnamon, and added 1 tsp vanilla, plus some sliced almonds and raisins. Very apple-y, I wouldn't add apple sauce or juice. will definitely make again, thanks for submitting.

great recipe!! i used a 19oz 5 bean mix. just eating one now and it's wonderful. I didn't mix the rice and beans, just layered them- will make according to recipe next time (all around flavor). I've frozen the rest, which will make great (and affordable) student lunches. Thanks for submitting.

Shepherd's Pie VI

Best Shepherd's Pie I've ever had. I used mozzarella cheese, topped with parmesan, because we didn't have any cheddar on hand. Also, didn't have a 2 quart casserol dish, so used a deep 5 x 9 dish instead.

Sun-Dried Tomato-Flavored Hummus

Mmmm! Thanks for submitting this! i really liked the idea of making it creamy with mayo, but the result was too 'tangy', not chick-pea-y enough, i found it to be better without the mayonnaise. This hummus and tomatoes in whole wheat wraps make the ultimate light lunch!

Chicken Pot Pie IX

Not bad, i ended up with too much of the liquid by the end, but the flavours were fantastic. I subbed in shallots and garlic for the onions, and next time i will sub broccoli for the peas, as well as brown the chicken before putting it in the pie crust. good recipe, nostalgic smelling for sure!
