About me:
I'm a "newlywed" with 2 biological children and 4 stepchildren. I'm also employed as a Postal Worker for Canada Post part-time. My husband loves good food and was raised by parents from Morroco and France, so I'm learning new dishes all the time! I love cooking for my family of 8 and especially like seeing their faces when fresh bread or cookies come out of the oven. To add to our chaos, we recently adopted two little dogs into our crazy household. We have a mini schnauzer named Jade and a mixed Bichon/Tibetan Spaniel named Coco. Needless to say we have a very busy life but we try very hard to sit down and have at least one family meal together each day!

Pace® Spicy Grilled Quesadillas

What can I say, it is the same version that we all know how to make. Nothing really new. The fat content is quite high but tastes good. Any salsa will do and you you can add your own veggies as I have done. Shredded carrots for picky children, and zuchini will never be detected in this dish. Add mild salsa for less spicyness. Put a bottle of hot sauce for those who like a kick. I have tried this same recipe with a combination of different cheeses like Jelapino cheese, ranch flavoured cheddar, and mozzerela(sp). All really good. I have also for something different to this basic recipe have used flavoured tortillas. Good stand by! Only 4 stars because it is a stand by recipe.

Barbecued Shredded Beef

I cooked this for my husbands family for lunch.This was a very good recipe with simple ingredients found in your pantry. I cooked a 7 pounder slow in the oven over night, midnight until 7am, big mistake!!! I woke up at 4:30am really hungry. The smell in the house was too much for me to sleep through. I laid awake until my kids got up then I had to get the roast out and start to nibble. There was too much liquid but if cooked in the oven it is needed to help keep it from drying out. Mine did on the parts where it stuck out of the liquid. Used some fresh garlic and beef stock instead of water. Might try the crock pot next time. My husband liked the flavour and it looked just like the picture. Very easy.

Aussie Barbequed Boneless Leg of Lamb

The lamb tasted great. The BBQ sauce recipe was about twice as much as was needed for the roast. I also found the BBQ sauce was too tart, so I added about 1/2 cup of brown sugar. I cooked it med. rare (145deg) and it was perfect. I will make this again with the marinade, but probably make a different BBQ sauce as it is not really appropriate to for the lamb.
