Peppermint Chiffon Cake

While I haven't made this particular Chiffon cake, the recipe is exactly the same as mine for Maple Chiffon - Just sub mapline for the peppermint. This is a cake I have made for 30 years and it NEVER comes out dry! Perhaps the egg whites were over-beat and too stiff? Great Alteration to a classic! Thanks for the recipe!!

Apple Pie Muffins

I made a few changes due to personal preference... I used half white flour and half oat flour. I also cut the butter in half and added an extra egg. I didn't have any milk on hand so I used low fat apple yogurt. I also grated the apple instead of dicing it. Didn't use the topping on it, so I added the cinnamon to the batter. Then I added a cup of quick oats. Really good!

Erin's Indonesian Chicken

This is a really good quick dinner. I grilled the chicken and then poured the sauce over the chicken and rice on the plate... you CAN taste the peanut butter, but all the flavours work well. I'll be making this one again!

Roll About Sugar Cookies

Thanks so much to Qwertzik for the tips for making this work. I made half a batch of these. I used margarine instead of shortening and 3/4 cup white sugar with 1/4 cup powdered sugar. I only used 1/3 cup milk instead of the 1/2 cup, and used 2 1/4 cups flour with 1/2 tsp salt and the dough turned out really well. Probably could have rolled it out, but I decided to roll the dough into one-inch balls and roll them in a brown sugar/cinnamon mixture. Flattened slightly before baking and baked for 8 minutes. They turned out nice and soft, with just the right amount of sweetness. So, since heavy modifications are needed for this recipe, two stars is really all it can get.

Ooey-Gooey Cinnamon Buns

Awesome! I'm very picky with sticky buns...and these we near perfect. Next time I will add an addition 1/2 cup - 1 cup of sugar to the dough and use a bit more cinnamon in the filling!

Szechwan Shrimp

This was pretty good, although not quite spicy enough for me. I added some cayenne pepper and some hot chili paste as well as some salt and pepper.

Best Big, Fat, Chewy Chocolate Chip Cookie

I was searching for a good chocolate chunk cookie recipe when I found this. I substituted 2 cups of chopped bittersweet bakers chocolate for the chocolate chips and they turned out fantastic. I was also just making these to pack for lunches...so i wanted smaller cookies...not giant ones. So I figured if i size the dough on the cookie sheets to what i normally do, they will turn out the normal size. I was wrong....these cookies spread alot and were quite big...And I ended up baking them for about 17-18minutes. But still a delicious recipe!

Simple Scones

I make this in small scone dimensions for my youth group Sunday School class and they are so excited when they see then scones! The currants go over great and they are always delicious. I now always keep frozen butter in half cup measure in my freezer for this recipe. If you try it with almost frozen butter it melts all over the pan. Frozen is best. Cheese works great to but also melts around a bit. Use parchment paper for easy clean-up.

Mall Pretzels

This is my second time making these. The first time I followed the recipe identically, and they were AMAZING! The dough is amazing to work with, I was done with rolling them within a half hour. Second time around I followed some other reviews about the baking of them, the dough was perfect and I didn't alter a thing. I boiled them in shallow baking soda water for about a little less then a minute. Then I baked them from 10 minutes at 400. They came out amazing! This is a perfect recipe!

Breaded Chicken Fingers

I followed a few of the other members suggestion. I double battered and I tried baking them. When i took the out of the oven...the batter wasn't fully cooked...and they were still quite white. I was making home made fries as well, so I through them in the oil for around 30 seconds. They turned out perfect.

Kellogg's® Chocolate Scotcheroos

So delicious! Remind me of the peanut butter rice krispie treats you can buy at the store. I did omit the butterscotch chips, personal preference...me nor my boyfriend are fond of them, and used nearly 3.5 cups of semisweet chips for topping. Another user suggested double the topping and i second that. I just covered the tops of them with 3.5 cups.

Oriental Chicken Salad

Quick and Tasty! I left out water chestnut as a personal preference and my boyfriend added another handful of cashews to his serving. Easy to manipulate! AS I found out the next day, this salad doesn't keep very well. (the effect is similar to what happens to ceasar salad)
