Irish Soda Bread in a Skillet

I tried this recipe earlier tonight as an extra side to go with tonight's dinner (Irish Chicken curry stew)and wow what a good pairing. I Did not modify or stray from the original posted recipe at all. I found it to be very moist and rather flavorful for a basic version of one of my all time favorites. This turned out great and find myself with half a loaf left over for tomorrow's breakfast. Cheers~!

Skyline Chili I

I followed this recipe pretty closely, but based on reviews, made a few changes. I browned the meat with some chopped onions...then chopped it all up finely in the food processor (crucial step) with a little water. I had to do this in 3 steps. I then used 2 cans of tomato sauce and skipped the paste. I used a little less cinnamon. I loved this, it was much better than my last attempt at this dish....using the food processor made all the difference and gave the sauce just the right texture.

Cranberry Orange Loaf

This was great. I left out the nuts and added streusel topping the second time. This loaf stays moist for many days and seems to get better the longer it sits.

Slow Cooker Stuffing

I rated a 3 as if I made as written it would have been way too wet and would of had a 1 star. Way too much chicken broth for 12 cups of dry bread. Five star for the flavour and addition of mushrooms was great. I added additional fresh herbs as we really like a flavourful dressing. My husband said it smelled like thanksgiving when he was mixing it up. I doubled the recipe, and mixed 3 eggs and broth to about three cups for the entire batch. I did use all of the butter. My pot is pretty hot so a total of 4 hours on low and I stirred every hour and kept the lid off for the final half hour. Would leave it off longer next time just to drive off a bit more moisture.

Pumpkin Chocolate Chip Cookies

Amazing! I used 1 cup brown sugar with 1/2 cup white, and added 1 tsp of salt. I should have baked them a touch longer, but they were still great.

Zucchini Dutch Cheese Casserole

We love the versatility of this recipe!! Cheesey and good.. And remember change the cheese change the taste, we have made it with provolone, cheddar, mozza, parmessan.. And it still tastes good.

Peanut Butter Cup Cookies

This is an amazing cookie recipe!!! I do agree that freezing the peanut butter cups before placing them into the cookie makes this so easy. Plus, by doing this the cookie doesn't crack. Just wonderful!!!!

Apple Strudel Muffins

Good basic recipe. I made them as per the recipe but next time I will do what other reviewers have done - shred the apple and add more of it. Also I will add more spices to the batter as it needs a little something more.

Melt-In-Your-Mouth Meat Loaf

Very moist. Substituted onion with onion soup. Baked in conventional oven at 350 for 90 minutes. Ensure internal temp > 160. Excellent taste.

Sky High Yorkshire Pudding

Added salt (who cooks anything without salt?) but that was the only change I made. They were pretty good. I say "pretty good" because after 15 minutes the outsides were very dark and the insides still weren't cooked but this is probably due to my oven. They definitely rose like no yorkshire pudding recipe I've ever seen though and I'm going to give them another try at a slightly lower oven temp.

Homestyle Potato Chips

Fun! I actually made these several times ages ago, and I forgot to review them. :) Instead of slicing the potatoes, I used my vegetable peeler to peel off slices. I then followed the rest of the recipe. They turned out awesome! Be sure to stir the slices a bit once you put them in the fryer so they don't clump up. Thanks for sharing, Almalou!

Zucchini and Shells

Not bad. Like others, I had lots of zucchini around, and I was tired of making zucchini muffins. I doubled the recipe but only used 2 TBS of oil. I also used a 26-ounce can of spaghetti sauce and a can of diced tomatoes. I omitted the sugar altogether. It was good, but much better when I used an emersion blender to puree some of the zucchini up. I might make it again, I might not. Neither my husband nor my daughter were thrilled, but I did find it a nice change. Thanks for sharing, FABA!

Carrot Cake

Pretty darned tasty! I used maybe ½ tsp cinnamon (allergies in the house) and I added a few shakes of nutmeg to make up for it. I also used only 1 cup of oil. I used more like 3-½ cups of carrots; and, as suggested by other reviewers, I used Cream Cheese Frosting II. It was fabulous and moist and gone in two days! Oh, and it took around 45 minutes at 350 for a 9x13 pan. Thanks for sharing, Autumn/Fall!

Easy Batter Fruit Cobbler

I enjoyed the ease of this dessert. I think the longest part was peeling the peaches - everything else was a snap. I think next time I make it I will add some cinnamon and brown sugar but this recipe is one to keep.
