Chocolate Toffee Crunchies

Like the others, I brought these to a party, and they were a huge hit! People could not believe these were made with saltine (salada in NZ) crackers. I want to experiment and use other types of salty snack foods with this, so next time, I am going to make this using pretzels! That should be good too!

Pierogies

My mother is Ukrainiane and has taught me to make these, except they call it Vareniky. They take ages to make and five minutes to eat, but are super delicious. They can also be made with cherries and served with thickened cream or ice cream as a dessert. I make them all the time if I have leftover mashed potatoes or cabbage. I would just like to add that many nationalities have pierogies but have different names for them. Ukrainian pierogies are made with yeast and deep fried or baked.

Onion Chicken in Balsamic Sauce

Very yummy. Added 1 tsp of dijon and 2 tsp of brown sugar to sauce. Added some mushrooms in as well before baking in oven. Thickened at the end with a Tbsp of flour. Very very yummy!

Playgroup Granola Bars

These are great! I didn't have wheat germ so left it out. Next time I'll use that and maybe some dried cranberries. I added chocolate chips and sultanas. Didn't care for the chocolate in these. I'll cut down on brown sugar as I thought they were pretty sweet. Overall perfect and my son loved them!

Sweet, Sticky and Spicy Chicken

Followed the recipe to a tee, except for hot sauce (I had only 1 tbsp left). Way too salty. Chicken pieces don't need the seasoning in addition to the soy sauce. If I was to make this dish again, I'd use half the soy sauce with chicken stock. My dish came out nowhere near as light as the dish in the accompanying picture. I won't make this again.

What a great base recipe. I also used diced tomatoes instead of tomato juice, upped the kidney beans as here in Australia couldnt find pinto. Put it in my crockpot and just magic after 8 hours. This is a real keeper.

Golden Pork Chops

This recipe wasn't outstanding, but it was definitely above average. I fried the chops in oil and onion and then baked in the oven in one tin of cream of mushroom and one tin of those sliced mushrooms in gravy, while adding a handful of sliced fresh mushrooms. The herb for pork is rosemary, so I added some of that to the chops when I was frying them. Delicious and tender.

Trini Mango Cheesecake

Excellent recipe, I added chopped macadamian nuts to the cheese mixture before baking & used digestive biscuits instead of graham crackers. We didnt have mango nectar so used canned mangoes for the sauce and fresh mangoes on the top. Dh ate the entire cake in 24 hours. Said he loved it. Taste better than the deli. Thank you Trini !!! Will be making it again this weekend.

Chocolate Mousse Cake I

This was really really good, but be warned it is best after being refrigerated for more than a day. I made it for some gluten free friends and couldn't in good conscience serve it when I tasted it after having it refrigerated overnight, but after a full 24 hours in the fridge it was good, but the next day it tasted fantastic, much better with age this one.

Cashew Chicken with Water Chestnuts

This was pretty good in terms of the flavour of the sauce, but the water chestnuts did not seem to meld with the dish as well as I had hoped. I mightr try this recipe again but leave out the water chestnuts.
