Australia and New Zealand

Australia and New Zealand share a common bond that goes beyond language and a fondness for similar foods. Both countries were former British colonies and are now part of the Commonwealth Realm. Though separated from one another by 1,000 miles of ocean, they have been brothers in arms and, like brothers, have gone through their share of growing pains and bitter rivalries. Their similarities led former New Zealand Prime Minister Mike Moore to say that New Zealanders and Australians share more in common than New Yorkers and Californians.

About me:
I am a reluctant chef. I don't believe in growing old, in fact growing old is just an option. I am presently employed as a civilian chef with the New Zealand Army. Although I have only had my chefs papers since 2003 and have been working in kitchen since. I have a simple outlook on life and try to pass that on to others. I am looking at travelling to the United States in 2007 / 08 to study and work in the traditional American Diners. I have 2 City and Guilds Certificates both with Distinction Pass marks. I write travel/cooking articles on New Zealand as a photo journalist, this just a hobby interest.

Bertha's Blueberry Dumplings

Very quick and easy to make. Really loved the blueberry sauce. So good with vanilla ice cream. The dumplings have potential but I found them too heavy and not very flavourful. Used butter instead of lard. A lighter dumpling with some vanilla & lemon zest added would make a huge difference.

Surf N Turf Dinner

The taste is Fantastic. Although next time I won't bother stuffing the steak with the cooked shrimp - I really didn't care to be putting the cooked shrimp inside a raw piece of meat. And for some reason it took longer to cook the steak with the shrimp inside. Next time I will double the sauce (it's SO tasty) with the shrimp; cook the steak and then assemble the dish with all the shrimp and sauce on top of the meat. I served this with rice. Great meal. I believe this will become a 5 star meal with my little change.

Bobbie's Oatmeal Cookies

These are the best Oatmeal cookies ever. Light and crispy and delicious. Decided not to add the choc. chips, but otherwise followed the recipe to a tee. I don't think the cookies lacked anything without the choc chips, they stand on their own. I finely chopped the pecans. They flattened out but to a nice thickness. It's important to let them sit on the baking sheet for a few minutes otherwise they're too soft to hold their shape. I won't be using any other recipe for Oatmeal Cookies in future. Thanks to the poster. Made 72 nice sized cookies.
