Ricotta Fettuccine Alfredo with Broccoli

Reviewed: Apr. 18, 2009
I didn't mind this. I didn't have broccoli so I used frozen spinach. I also put in musrooms and chicken. I cooked the pasta...while that was cooking I made the sauce...I steamed the spinach and then fried up the mushrooms and chicken. When the mushrooms and chicken were done and put the sauce back in to heat it up some more then I poured it over the pasta. It wasn't fat free as I used whole milk and full cream butter...but it turned out really nice. Oh and I added powdered garlic to the sauce as well as parsley and salt and pepper.

This is the way my Great Grandma used to make her salmon patties and boy have I missed them! A fantastically simple Southern recipe. Now if I could just make up some biscuits to go with them :) Thanks Del and Dad!

These turned out so smooth and creamy. I added 1 cup of pureed cauliflower to about 4 medium sized potatos. Very very good with steaks or chicken.

Quick and Easy Brownies

Reviewed: Mar. 18, 2009
This extremely rich. I used the full amount of butter, but only 1 cup of flour. Next time I'll use 1/2 cup of butter because it made it almost sickening with the amount of butter that was in it. They are definitely the way a brownie should be, but very very rich. Don't need icing at all with this recipe. Very chocolaty..very moist...and very rich!

Rosemary Chicken Noodle Soup

Reviewed: Mar. 16, 2009
Fantastic! I made the recipe (almost) faithfully the first time, and it was very good. However, I did make a few changes the second time around that made the soup even better. First, much as I love rosemary, I did cut back by about half. I also added closer to 12 c. of water, and threw in about 2 tsp. of solid chicken soup base for extra flavor. Didn't have any penne on hand, so I used multi-colored rotini (which was great and added color and texture to the soup). Finally, I urge you to consider using boneless thigh meat in this recipe--soooo good! Not only does it offer a complex, gamey flavor, it's cheaper than buying breast meat! :)

Excellent recipe. Halved it for the pear cake also from this site & it covered the cake beautifully. Not sickly sweet either. Just perfect. Thanks for sharing. Will only use this cream cheese frosting from now on as all other cheese frosting pale in comparison!

Quick and Easy Alfredo Sauce

Reviewed: Mar. 7, 2009
Best White sauce ever! We bought a deli chicken, deboned it and cut in cubes. Added it to the sauce and tossed with pasta. Tasted better than what we have and our favourite Italian Restaurant. And best of all, it is sooooo easy & quick. We also tried it another time by adding fresh mushrooms which was very good but not as good as the deli chicken. Thank you for sharing. This recipe is a keeper! We tried it again with fried bacon & mushrooms and it was really good as well...have to say that the best is still with roast/deli chicken. It's so good that mom wants the recipe.

Fabulously Sweet Pear Cake

Reviewed: Mar. 7, 2009
Our family's new fav cake! I used brown sugar only not white. Used macadamia nuts as we didn't have pecans or walnuts. Didn't puree the pears, simply sliced them thin. We used the cream cheese frosting also on this site. Fabulously deeelicious & Perfect combo with tea or for dessert with a cup of steaming latte! Husband took it to work and all the guys wanted a copy of the recipe to take home to their wives...hehe. No one could believe there was pear in the cake :o) Thank you so much for sharing!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Reviewed: Mar. 3, 2009
I have made this twice now and love it. Make sure to really blend the beans finely otherwise the cake will be very grainy. Also make sure to allow the cake to cool before removing from the tin otherwise you will leave half of it behind. Really grease the tin well before adding the batter. Definately use dark chocolate for this.

Shearers' Mince and Potato Hot Pot

Reviewed: Mar. 2, 2009
<> from Kattjovi I have been reading a lot of reviews where people have said they need to drain the fat from the meat. This is an Australian Recipe, and we don't have a high fat content in our mince steak, so we don't need to drain it. I apologise to o/s cooks, I did not realise this when I posted the recipe, and yes Ketchup is Tomato Sauce in Australia. I think this recipe is quite versatile, you can add whatever herbs etc you like, you could even spice it up with a bit of chili powder! That's the fun of cooking,(I think) experimenting! Enjoy!

Mango Lemon Sorbet

Reviewed: Feb. 16, 2009
This was a great simple recipe, we had so many mangoes so i used up the really ripe ones in this recipe. I put the mixture into our ice cream maker and it was great, the flavour and texture was even better after a week in the freezer... much better than the best supermarket brand... and no added junk, preservatives or colours. this is going in my favourites recipe book!

This recipe is truely fantastic, not only does always turn out moist and rich in flavour, but its not expensive or hard to make. I've made this for friends and family and you can have it sliced cool with butter or serve it hot with a toffee sauce and ice cream!

Soft Giant Pretzels

Reviewed: Jan. 29, 2009
I followed the recipe exactly, still had to add extra flour after the bread machine mixed the dough because it was too sticky. Even with that, after the dough had risen, it was still very very sticky. I had a hard time getting it out of the bread machine tub. Even so, the pretzels tasted good, especially brushed with butter and cinnamon and sugar. I think next time, I will need to add even more flour to the dough, I only added about a spoonful, but it seems like I could almost have added up to another 1/4 cup and been ok.
