Oven Baked Jambalaya

I made this for dinner tonight. I had to cut down on some of the hotter spices in the mix so my young kids could eat it and rather than baking it in the oven i did everything in a big electric roasting pan that has a lid - I cooked it for 45mins on medium heat and it was perfect. Very nice thanks!

Savory Herb-Crusted Chicken Pot Pie

This was so easy to make. I followed the recipe except I seasoned the gravy with salt and pepper and also added some parmesan cheese and crushed garlic to it. I served it with tradition garlic bread and some steamed veg. My hubbie doesnt even like chicken pot pie but he loved this one!

Chocolate Covered Cherries

I was not sure of this recipe as im not a huge glace cherry fan...and i was right to be unsure. I didnt like the glace cherries so I made them again with room temperture frech cherries and dried cherries. With the fresh ones...dont let them sit for 2 weeks you wont be liking the mouldy cherry but they are fantastic served the same day with coffee after dinner and the dried cherries were fanstastic as you could let them sit for a week or 2 and they retained all the flavour of a real cherry without the mould. VERY YUM!

Fudge Truffle Cheesecake

I made this twice and gave this 4 stars for a for a few reasons. 1: because the wafer base turned out yuck so i had to make it again and i used oreos instead. 2: because when made according to recipe it was too chocolatety so i changed it too 1/3 less and used dark chocloate 70% cocoa which made it yummy and also used only 2/3 of the condensed milk because its too sickly 3: it wasnt fudgey it was just cheesecake texture and i dont think there is anything you can do about it. Was yum once the kinks were ironed out.

Chicken Parmigiana

This was fantastic! I herbed the bread crumbs and added about 2 tblspns of garlic powder also because we LOVE our garlic. I cooked them on a airated cookie tray to make them extra crispy and then transfered to a baking dish for saucing etc. I also used chicken thighs (no bone) instead of breast and it was much more tender if you use thighs decrese the first cooking time by 15 mins.

Blueberry Pie

I made this yesterday for my family and I was slightly dissapointed. I made it as the recipe stated with fresh berries but i took other reveiwers advice and added a bit more sugar about 1 cup because i like my pies sweet. Having said that everything else i did to the dot but when i cooked it I found the crust edges browned far too quickly and the the top wasnt even cooked yet. The oven temp needs to come down and the cooking time go up i think to about 190 degrees C and 1hr 10m would do it. I also found that once cooled when i tried it it was blandish and had no real character. But today I had a piece for breakfast with toasted meusli and it was far batter the next day and when chilled not warm or room temp. If eating it the same day serve it with cream or icecream cause it really needs a little something. Overall it was OK.

Gram's Persimmon Pudding

This was absolutely delicious. Probably the best pudding I have ever made! It got rave reviews from everyone in my family. It was moist, light, a little chewy on the edges, not too sweet yet flavoursome. Perfection!

Masala Beef with Ginger and Curry Leaf

Apple Pie by Grandma Ople

OH MY HEAVENS WAS THIS GOOD! I could not believe how fantastic this came out. I made it for some dinner guests and they were blown away by it!!! I used pre packaged short crust pastry and red apples for extra sweetness. I also made the syrup cook a little longer so it was really thick and it acted like a toffee topping over the pastry lid.

Quick and Easy Alfredo Sauce

This was really good. Easy to make and I had no complications making it. I added it to spiral pasta and some Atlantic salmon and it was fantastic. I did change it a little, i used 1 clove of fresh crushed garlic instead of powder and added a tiny pinch of salt. I also found that if you double the recipe and add 1/2 a cup of both cheddar and mozzarella cheese it makes a delish white sauce for lasagna.....YUMMY!

Golden Lemon Pound Cake

This was amazing! It was so light and fluffy yet it held its shape really well. The only change i made was i used 4 tablespoons of lemon juice in the cake and 3 in the glaze because i like my lemon...I gave half the cake to my neighbour and i thought she was going to fall off her chair when she tasted it!!! Will absolutely make this again!!!!!! Thankyou!

Caramel Popcorn

I made this on impulse when my sisters came around to watch movies. I was so easy and quick to make and it tasted fantastic!!! The only issue i have with it is that it went a little chalky if left sitting on the table for more than a couple of hours. Ive made it again since and used an extra 1/4 cup of brown sugar and used golden syrup instead and it gave it a much more toffee caramel consistency. Love this will make over and over and over. Thanks for sharing.

Best Brownies

I made this only half an hour ago and contrary to the blurb on the recipe page this did not turn out! I has a very cake consistency, looks nothing like the picture and it fell apart when i turned it out. I followed the instructions exactly. Tasted ok thought, might make a trifle with it. I also made the same recipe but i added 3/4 cup of chunky peanut butter and we will see how that goes but im pretty sure its worked out better.

Peanut Butter Cup Cookies III

I found this recipe too powdery in consistency, i suggest making it with a little more milk as it drys out. Although when it is tweaked to your own tastes this recipe is good.....and as i like mine more on the chewy side i find it good to add 1 table spoon (40mls) treacle or golden syrup to the mixture.

Ham 'N' Cheese Pie

So quick and easy - the kids loved it! Also hubby loved it because it wasn't called a quiche - and real men don't eat Quiche! I blind baked a sheet of frozen short crust pastry as I did know what biscuit mix was (don't think we have it here in Australia)and it was lovely,I cut down on the onion though as the kids have an onion phobia.
