Polly Welby's Excellent Chocolate Mousse

Simple and absolutely delicious!!!! I followed Josie's Mom's tip of folding the whipped cream into the chocolate and it worked a treat! It was a little dense (I may have over whipped the cream) but still fantastic. If you have these two ingredients it's perfect for a sudden craving as it's so quick to make! Thank you!

Fragrant Chicken Curry

Thank you for a quick and healthy recipe. We loved this dish, serving with mango chutney and coriander really brought the flavours to life. I did not have ground cloves so added turmeric, cumin and ground coriander to my spice mix. For flavouring toward the end of cooking I added soya sauce and some honey with ginger pieces in it. I discarded the skin from my chicken befor adding the meat to the curry. I also bulked up the curry with chopped celery, capsicum (red and green) and some potatoes. Had quite a few extra vegies to use up thid weekend. Will definitely make this again

Lemon Pudding Cake I

Really, really good! I reduced the sugar to 1 cup and it was plenty. The cake part was so soft & light and the sauce quite rich. Great with some cream over the top. Can't wait to make this again.

Slow Cooker Baked Beans

I don't know if I can every eat canned baked beans again after eating these. This is an easy, healthy recipe that is lovely to make the night before on a winter's night and have something delicious for breakfast the next day. I had to make some substitutions due to things not being the same in Australia: - I used a 500g package of dried lima beans as this was all there was at the grocer. Soaked them overnight before cooking and also got rid of the husks as well. - Used a 400g can of crushed tomatoes and 2T of tomato paste instead of the ketchup - Added 2 cubes of bacon stock to the water Will make again and again!

Balsamic-Glazed Salmon Fillets

Thanks for a great way to bake salmon, Isybel. I made this as written but had to use lemon juice instead of the wine as it was all I had. The glaze was fantastic and I am so glad I took the effort rather than buying ready made glaze. Will definitely make again.

Gourmet Mushroom Risotto

Awesome recipe and very easy. You actually don't have to stir constantly, just at least once a minute or so. And I added more than the usual 1/2 cup of liquid per time. Also added asparagus cut into 1cm slices and proscuitto and some garlic with the mushrooms. Added extra wine too. Will definitely make again.

Spicy Grilled Cheese Sandwich

Throw out the sandwich maker! I love the simplicity of this sandwich and it's so infinitely versatile as you can sub in and out ingredients as to what's on hand. I never made toasted sandwiches because it was always a hassle to pull out the sandwich maker and this method is so easy, quick and less clean up. Bonza!

Kentucky Butter Cake

This was so easy to make. I had all the ingredients on hand, except for the buttermilk, i used plain milk instead. It worked out great. i think i might make a little extra sauce next time. Tastes great the next day also. i just put a piece in the microwave for 30 seconds.

Blue Cheese Fried Potatoes

Good except by the time the potatoes were cooked through the onions were burnt to a crisp! Had to take them all out before adding the cheese & bacon. Next time I would cook the onion first then remove and add back to the potato once cooked.

Russian Chicken with Feta Cheese

I wasn't sure about this to start with but it ended up being great. I made the sauce ahead of time then just heated it up and served over the top of grilled chicken breasts. Could taste the vodka but it wasn't overpowering. Very glad I gave it a go!

Buffalo Style Chicken Pizza

This just didn't work for me. The butter separated while cooking and left a horrible greasy layer on top of the pizza. I used ranch instead of blue (as I can't get blue cheese dressing) and it made the base soggy & didn't taste of anything. Sorry :(

Average at best. I made this in the Slow Cooker so eliminated the water. It really wasn't special at all. I was expecting so much more from the positive reviews but it was just so bland and boring.

Korean BBQ Short Ribs (Gal-Bi)

I cooked these in the slow cooker then finished them under the grill in the oven after brushing them with some ketchup manis, brown sugar and sprinkling of sesame seeds. Very tasty ribs. A little on the salty side but not so much that you couldn't eat them. Next time I would add some ginger & chilli.

Lemon Chiffon Pudding

Excellent! This didn't create a sauce for me but ended up being a cross between a pudding and a souffle. Very light and fluffy with a beautiful lemon flavour. I added some grated lemon zest to the mix and reduced the sugar to 1/2 a cup. Also made 6 servings instead of 4 which was just enough for 4 people.

Sicilian Garlic Sauce

OK I have mixed feelings on this. I agree with previous poster that this sauce benefits from being cooked. I tried it both as written with grilled chicken and hot tossed through spaghetti. The garlic was far too raw tasting & overpowering when not cooked. I ended up adding a lot more basil and topped my 'cooked sauce' with plenty of parma cheese.
