Not bad, but I doctored it a bit. Used a can of seasoned tomatoes. Added shallots, diced ham, celery, can of mushrooms, some diced black olives, parsley, diced onion, some frozen peas. Definitely a poor man's or woman's meal. Very quick too.

Quick and Simple Broccoli and Cheese

Got what I was looking for. Simple, easy and quick. Less than ten minutes. Used steam in a bag broccoli and cooked it less than called for by 1 and 1/2 minutes. Lightly seasoned with sea salt and black pepper and a little bit of lemon juice. Then, topped with the cheese. No complaints!!

THE Pasta Salad

Very good. Alterations: Did not have swiss cheese, onions, scallions, or frozen peas. Substitutes: Pepperjack in moderation and parmesan. Frozen corn for frozen peas, chives and dried onion for fresh onion and scallions. Other, more paprika, parsley, shaved carrot, bacon bits and sliced black olives. Lastly, less mayo and more sour cream.
