Tracy's Tomato Artichoke Rice Salad

Made changes. Used green onion b/c that was all I had. When cooking the rice I added some Oregano, Parsley, Garlic, Nutmeg and Salt. I also cooked fresh mushrooms with the rice. The can of artichokes that I had came in water so I added olive oil to the mix instead of using the "artichoke marinade." When combining the ingredients I added more Oregano, Parsley, Nutmeg, Salt, etc. Then added a can of garbanzos and poppy seed. Colorful and tasty.

Honey Mustard Salad Dressing

Due to the economy, and my shortened work hours, my kitchen cabinets are relatively empty...something I've never experienced before. So I had to bring some salad home from my job's cafeteria (along with an apple, and a yogurt) so I could have something to eat for dinner. I opened my fridge only to realize I had no dressing. Jumped onto this site and found this recipe. All I can say is it came in REAL handy and did the job just fine. I used Sherry vinegar because that's all I had. I used only sugar because I'm out of honey and didn't have money to buy more. I used onion powder and dried cilantro flakes, once again it was all I had. It tasted just fine and I actually prefer it over the bottled stuff. A MILLION THANKS!

Filet Mignon with Rich Balsamic Glaze

This was DELICIOUS and I'm not much of a red meat eater. I eat red meat MAYBE once/month. I did make a couple of changes: - I used sirloin steak because I couldn't afford filet mignon. - I did first season the meat with adobo instead of using just salt. - I used Al Jerez (Sherry) Vinegar because I didn't have balsamic vinegar - I used Beringer Cabernet Sauvignon - I mashed one clove of garlic and rubbed it into the meat after seasoning with adobo - I doubled the wine/vinegar mixture and let the steak marinate in it overnight. - I didn't cook the steak in the sauce, I grilled it on my little George Forman grill. - I added 1 teaspoon sugar to the sauce and then let it simmer with sliced portobello mushrooms until it reduced in half - I served it with Smothered Green Beans and Honey Roasted Red Potatoes both found on this site. ABSOLUTELY SUPERB!

Quick and Easy Alfredo Sauce

This is a nice base. I added red pepper flakes, chives, parsley, smoked paprika, garlic and onion. Then mixed with noodles, mushrooms and broccoli. 4 stars for taste and 5 stars for simplicity!!

Grilled Salmon I

This recipe is incredible. It is simple and tasty. I didn't grill my salmon. I made individual parchment packets and baked at 400 for 15 mins then turned the oven off and let it sit in the hot oven for 5 mins. When I served the salmon in the packets. I just cut open the parchment packets. My family loved it including the picky 3 yr old.

Skillet Pork Chops with Potatoes and Onion

Was a wonderful simple recipe. My only problem was that it was REALLY salty. Like other reviewers have said I would omit the salt the next time i make it and allow the broth to salt the dish.

Pasta e Fagioli a la Chez Ivano

Wonderful the day after too! Added anaheim and ancho (poblano) peppers, mushrooms and carrots and a bit of red wine. I would classify this as a stew. A very hearty meal.

Chocolate Peanut Butter Pie

A-W-E-S-O-M-E! Used home made graham cracker crust because I just happened to have one prepared. Used peanut butter only. Thought peanut butter mixture was too thick so before folding with homemade whipped cream I added about 1/4 cup leftover heavy cream to peanut butter mixture(didn't have milk). Then I folded in the whipped cream. Topped with drizzled nutella! SMOOTH, RICH, LIP SMACKING GOOD! THANK YOU!

The Best Vegetarian Chili in the World

Very good. I wish I had all the ingredients on hand, but despite this, the chili came out great. What I was missing: green pepper, fresh jalapeno, chili powder and veg. meat. First, after reading many reviews, I halved the recipe. Still a lot of food for 4 people. Changes: I cut up 13 Little Smokies, and three pieces of bacon and sauteed that with the 1/4 of an onion and 3 small celery stalks. I added the spices along with paprika, parsley and chives. Then I added a small can of mushrooms. Then I added the entire can of green chili's (no draining). Con't to saute. Then I added an entire can of garbanzo beans (I do not care for kidney beans), 1/4 can of red kidney and 1/2 can of black beans. Made my own chili spice, (can look up on the web) and added jalapeno flakes (very few) and some red pepper too. Also added 1 can of diced tomatoes and 1 small can of tomato sauce, 1/2 cup of water and a couple tbs of red wine. Thank you for sharing this recipe!!

Libby's® Famous Pumpkin Pie

I made this today, the day before Thanksgiving because it was my first time. I added about 2 tbs of flour and about 1.5 tsp of molasses, and a bit of nutmeg. My kids loved it, especially my three year old. Note: It did take longer to cook/set.

Parsley Spinach Chicken Stew

I am giving this 5 stars but I changed it a bit. Added a bay leaf, used left over chicken that had been seasoned with Rosemary, omitted the potato, added celery, carrots, paprika instead of tumeric, a tad more spinach, omitted the lemon because I had already cooked the chicken with lemon and lemon zest earlier, added more tomato paste and then more water and white wine. Cooked for 20 minutes and it came out very tasty.

This is a flawless recipe. Like other users I didn't use shortening and used all butter instead. I also used more Vanilla than the recipe called for and because i love the taste of chocolate and raisens I used chocolate covered raisens. My husband and kids loved it!

Tzatziki Sauce

What the recipe doesn't tell you is that you have to strain the water from the yogurt or you can use sour cream. I used sour cream. I also strained some of the water out of the cucumber. Watch the lemon as it can make the sauce too liquidy. The first time I made it I followed the recipe to a tee. It was a soupy mess. I made some adjustments and the recipe tunred out great.

Bourbon Chicken

I didn't give it 5 stars. Because I made it 3 times until I got the flavor i was really looking for. I partically like the "Mall" bourbon chicken. It is a great recipe to us as a base. These are some of my changes. I used chicken thighs instead of chicken breast. I seasoned the thichs with seasoning salt. I used 1/4 cup of lite soy sauce and 1/2 cup of chicken broth. I felt the recipe had a strong soy sauce flavor the first time I made it. I used fresh ginger and garlic. I used 3/4 cup of brown sugar. I used half of the marniade mixure as a marinade.I marnidaed the chicke for a couple of hours then threw it on the grill. The other half I simmered it to cook out the alcohol. Once the chicken was cooked I placed in a dish and topped the cooked chicken with the sauce. The taste is superb!

Not bad, but I doctored it a bit. Used a can of seasoned tomatoes. Added shallots, diced ham, celery, can of mushrooms, some diced black olives, parsley, diced onion, some frozen peas. Definitely a poor man's or woman's meal. Very quick too.

Quick and Simple Broccoli and Cheese

Got what I was looking for. Simple, easy and quick. Less than ten minutes. Used steam in a bag broccoli and cooked it less than called for by 1 and 1/2 minutes. Lightly seasoned with sea salt and black pepper and a little bit of lemon juice. Then, topped with the cheese. No complaints!!

THE Pasta Salad

Very good. Alterations: Did not have swiss cheese, onions, scallions, or frozen peas. Substitutes: Pepperjack in moderation and parmesan. Frozen corn for frozen peas, chives and dried onion for fresh onion and scallions. Other, more paprika, parsley, shaved carrot, bacon bits and sliced black olives. Lastly, less mayo and more sour cream.
