Fudge Puddles

Easy and delicious! I had left over fudge for probably 10-15 more "puddles". I omitted the pecans because I was also making pecan tassies and wanted something completely different from that. So... I used autumn colored sprinkles. I have no patience for double boilers so I used the microwave 20 seconds at a time. Stir, 20 more seconds, stir... until melted. Doesn't take long at all. The fudge sets quite rapidly so I had to reheat (about 15 seconds in microwave) every now and then. I used a plastic bottle (Wilton brand sells 2 for $2 at Walmart) to squeeze the fudge in the cups. I guess you could also use a ziploc bag and just cut the tip (one of the corners) off and use that as a piping baggie. Quite delicious!

Garlic-Lemon Double Stuffed Chicken

This tastes a lot like Ruth's Chris Steakhouse stuffed chicken! I cut off any fat, then butterfly and flatten the chicken with a meat pounder. Put the cream cheese in the microwave for 20 seconds or so just until it is spreadable and spread evenly on the chicken. Season the chicken with a little dried rosemary and garlic powder. Then I sprinkle on shredded cheddar cheese, roll the chicken up and secure with 3 toothpicks before dipping in milk and breading (this keeps the cheese inside!). I do use extra lemon juice - about 4 - 6 TBS. Everyone loved this including my 11 year old brother, he requested this for Thanksgiving! It is a little time consuming, but it is worth it!

Sopapilla Cheesecake Pie

I halved the recipe and made 3 small round cheesecakes with it. I liked it very much overall but I think it is too sweet. I love honey but adding it made the dessert WAY to sweet. Next time I will reduce the amount of sugar used as topping and maybe I will also reduce the amount used on the filling.

Mexican Chicken Corn Chowder

Very good!! Just finished making this. I wish I had used less than 1/2 of one packet of chicken bouillon seasoning, it came out a bit salty. I also used heavy cream, a can of tomatoes with green chilies, 2 small stalks of celery, frozen corn instead of cream corn, 2 slices of American cheese sandwich slices, and two small diced up potatoes. A very tasty recipe, and a very forgiving one if you do not have all or the exact ingredients. Next time, I will use less chicken bouillon. If you have small kiddies, test the spicey-ness before throwing items in i.e. hot pepper sauce, green chilies, etc!! Recommend!!

Chicken Enchiladas V

Yum!! I doubled the soup and sour cream as suggested by many and used chipotle taco seasoning instead of chili powder to season the chicken which I shredded after boiling for about 1 1/2 hrs. Will make again. Thanks!

Pico De Gallo

Avocado (aguacate) does NOT go in pico de gallo. Of course, people can do whatever they want with a recipe. Add chocolate if you want, it won't be authentic but if you are into it... go ahead. Lime, however, DOES go. Garlic ... I rather press a garlic clove into the pico de gallo than using garlic powder. Green onion ... again, not authentic but I don't see why I'd hurt anything. This recipe is good but it is missing the lime and I always skip the salt for health reasons. It really doesn't need it anyways.

Baked Zucchini Chips

The breadcrumb mix can use some more seasoning... like garlic powder and onion powder...maybe more parmesan. These are good though. I like that they are baked and not fried but still taste nice and crunchy. I served them with a garlicky mayoketchup dip that is very popular in PR (basically equal parts of mayo and ketchup with a pressed garlic clove or garlic powder mixed in).

Tomato Chicken Parmesan

Stupid me thought that I had parmesan in the fridge and guess what... I had used it all. SO...lazy me didn't go to the store and just skipped the parmesan. Yep, chicken parmesan WITHOUT the parmesan. A sin. Forgive me. Instead of Monterey I used shredded mozarella. I pounded the chicken thin and added twice as much sauce because we LOVE sauce. Served it with spagetti ... Yum Yum. It turned out pretty awesome. Of course, with parmesan (like it is supposed to be) would be even better. Quick, easy and flavorful = I'm happy.

Easy Tuna Casserole

5 stars for simplicity and I liked the idea of using french fried onions since I was out of bread crumbs. Alterations: I had no cheese but I did have two boxes of mac-n-cheese. Added some chives, celery, pepper, and parsley. That was it. Thank you, because my boys who are 6 and 4 years in age give me daily grief when it comes to meals, they hate this!! ;)

Homestyle Potato Chips

Great! I don't like them too crispy so I cut them with a regular kitchen knife rather than a mandolin or the food processor blade. I reserve the salt for right after frying and I use sea salt. Delicious!

Quick and Easy Alfredo Sauce

Very good and easy. However, I like to use fresh pressed garlic instead of garlic powder. I sautee it with the butter. I added shrimp to the sauce at the end and then stirred in some cooked penne pasta. Yummy.

WoW! I'm so pleasently surprised at the ease, flavor and versatility of this recipe. I made this to eat with lamb kabobs, tzatziki sauce, lettuce and tomatoes. My son is eating the naan by itself and said he wants to try it with eggs, bacon and cheese! This bread would probably go with anything. I made half of the recipe and infused the butter with the garlic rather than adding it to the dough. Love it. Love it. Love it!!

Oatmeal Dinner Rolls

I made this recipe in my bread maker as it is written (looks like the amount of water for the yeast has been corrected to only 1/3 cup) and it was FABULOUS!!! I put the ingredients into the machine in this order: oatmeal mix first, then the water (no yeast), flour, salt, sugars and yeast. Put the machine in 'dough cycle'. When ready, instead of rolls I made two small loaves: divided the dough in two, stretched it to about 8x8 and rolled it jelly-roll style just like you form white bread loaves. It came out perfect.
