Baked Zucchini Chips

The breadcrumb mix can use some more seasoning... like garlic powder and onion powder...maybe more parmesan. These are good though. I like that they are baked and not fried but still taste nice and crunchy. I served them with a garlicky mayoketchup dip that is very popular in PR (basically equal parts of mayo and ketchup with a pressed garlic clove or garlic powder mixed in).

Tomato Chicken Parmesan

Stupid me thought that I had parmesan in the fridge and guess what... I had used it all. SO...lazy me didn't go to the store and just skipped the parmesan. Yep, chicken parmesan WITHOUT the parmesan. A sin. Forgive me. Instead of Monterey I used shredded mozarella. I pounded the chicken thin and added twice as much sauce because we LOVE sauce. Served it with spagetti ... Yum Yum. It turned out pretty awesome. Of course, with parmesan (like it is supposed to be) would be even better. Quick, easy and flavorful = I'm happy.

Easy Tuna Casserole

5 stars for simplicity and I liked the idea of using french fried onions since I was out of bread crumbs. Alterations: I had no cheese but I did have two boxes of mac-n-cheese. Added some chives, celery, pepper, and parsley. That was it. Thank you, because my boys who are 6 and 4 years in age give me daily grief when it comes to meals, they hate this!! ;)

Homestyle Potato Chips

Great! I don't like them too crispy so I cut them with a regular kitchen knife rather than a mandolin or the food processor blade. I reserve the salt for right after frying and I use sea salt. Delicious!

Quick and Easy Alfredo Sauce

Very good and easy. However, I like to use fresh pressed garlic instead of garlic powder. I sautee it with the butter. I added shrimp to the sauce at the end and then stirred in some cooked penne pasta. Yummy.

Mushrooms with a Soy Sauce Glaze

Excellent!! I didn't add any black pepper because I forgot but it didn't really need it. MMMM! Easy and delicious! (Made it as a side dish for Maple Salmon which is OUT OF THIS WORLD, by the way)

WoW! I'm so pleasently surprised at the ease, flavor and versatility of this recipe. I made this to eat with lamb kabobs, tzatziki sauce, lettuce and tomatoes. My son is eating the naan by itself and said he wants to try it with eggs, bacon and cheese! This bread would probably go with anything. I made half of the recipe and infused the butter with the garlic rather than adding it to the dough. Love it. Love it. Love it!!

Oatmeal Dinner Rolls

I made this recipe in my bread maker as it is written (looks like the amount of water for the yeast has been corrected to only 1/3 cup) and it was FABULOUS!!! I put the ingredients into the machine in this order: oatmeal mix first, then the water (no yeast), flour, salt, sugars and yeast. Put the machine in 'dough cycle'. When ready, instead of rolls I made two small loaves: divided the dough in two, stretched it to about 8x8 and rolled it jelly-roll style just like you form white bread loaves. It came out perfect. That part about a passion fruit resembling a kiwi is ridiculous!! They are not similar in ANY way. I had passion fruit growing in my backyard back home, I know!! I have pictures of passion fruit up in my profile, take a look. Otherwise, good pavlova. I like to use superfine sugar.

Billy's Favorite Smoky Collard Greens

Pretty good! My first time making it and I was impressed at how simple and economical it was. Taste quite close to the collard greens I get at my local Jamaican restaurant. I ended up tossing my finish collard greens (drained) with some Quinoa that had been also cooked with onion, garlic,a dash of ground cumin, a dash of ground pepper, and adobo sauteed in extra virgin olive oil. Delicioso!

Pupusas de Queso (Cheese-Stuffed Tortillas)

Last year my friend for El Salvador made these for us on Thanksgiving while we cooked the actual dinner. It was supposed to be a light snack to keep us going until dinner was ready. Well... we ended up eating so many of these that we really didn't "tackle" Thanksgiving dinner full force like we usually do. She did use the two-tortilla method described in this recipe so...I guess it is also an authentic way of preparing them. Maybe she is from the side of the country that makes them this way...who knows. However, I do think that the single tortilla method described by our fellow reviewers must yield a better, less doughy result. My friend used beans along with the cheese as filling. The beans were kind of like a homemade refried beans. She prepared curtido to go with them (served on the side) and also a very plain and bland tomato sauce (she just pureed a couple of roma tomatoes). The sauce by itself was nothing but it worked very well together because of the strong flavor of the curtido. It helped mellow out the vinegary taste of the curtido. Pupusas are not my favorite thing in the world, they are just Ok for me (no matter who makes them, and I've had plenty). However, when compared to others I've had, these are very good.

Curtido (El Salvadoran Cabbage Salad)

I agree with T.L. Curtido doesn't go inside the pupusas. It is served on the side. I like to cut up the pupusa and have some of the curtido (and tomato sauce) with each bite of the pupusa. Most of my friends puree a couple of roma tomatoes by themselves and use that as the tomato sauce that is usually served with pupusas. The sauce can be pretty bland as is but the curtido has strong flavors, therefore, the bland tomato puree kind of mellows it out. Talking about strong flavors, I don't use quite as much vinegar for the curtido as a personal preference. However, the amount stated in this recipe is right and it yields a very authentic curtido. It is supposed to taste vinegary.
