Heavenly Chocolate Mousse

Reviewed: May 12, 2008
FABULOUS!!!!! I made this mousse as part of a filling for a cake. I did do some things a little different. When melting the chocolate instead of using all water I used 1/8 Kahlua and 1/8 water which I placed in a ceramic bowl with the butter.I put the bowl into the microwave for about 1.5-2 min. I then place the chocolate in the hot liquid mixture and let it sit for about 2 min. This made it easy to melt the chocolate with out placing it back into the microwave. I don't have a candy thermometer, so I whisk egg yolks, sugar and remaining water in the sauce pan and then placed it over a med-low heat whisking it continuously until I reached the uniform yellow consistency" like another reviewer had mentioned. Good LUCK!!!!

Spicy Basil Chicken

Reviewed: Mar. 28, 2008
This was absolutely soooo delish! And sooooo easy & quick. Perfect to make when you want something good but don't feel like cooking after coming home from a long day's work. I like my food strongly flavored so I did make some changes. I also took note of what other reviewers mentioned, I also wanted the dish to be saucy. Sooo I used:5 garlic cloves minced instead of the two suggested I didn't have chili oil or the money to buy it so I used olive oil (which I already had on hand) instead and added 1/2 teaspoon achiote powder to the oil for coloring and 1/2 teaspoon red pepper flakes for heat. I increased the sugar to 2 teaspoons because I added 1 cup of water and 1/2 cup of oyster sauce (instead of the 5 tablespoons suggested) to make it saucier. also added about 1 teaspoon of ginger powder. LOVED IT! I DEFINITELY WILL BE FORWARDING THE RECIPE TO FRIENDS AND THE BEST THING IS I DON'T HAVE TO COOK TOMORROW BECAUSE I HAVE A LITTLE LEFT OVER.

Detroit Hot Honey Wings

Reviewed: Feb. 19, 2008
I made this recipe on a cold Friday evening and it was a BIG hit. The kids loved it! Unfortunately I bought a cheap spicy sauce that had too much vinegar taste but that was my fault. I added some red chili flakes along with the cayenne pepper and it was delicious!! Thanks a LOT for sharing!!

Classic Tiramisu

Reviewed: Feb. 15, 2008
I love Tiramisu, but i was a little disapointed in how it came out for me, the only lady fingers i could find were the soft ones, so when i dipped the lady fingers in coffee they became really mushy so it actually ruined the whole desert, i guess next time i will brush the coffee instead of diping them, other than that the marcapone filling was great. but i will say i will defenetly try it again!

Wonderful recipe and very tasty. I learned NOT to make it ahead of time, otherwise it gets all watery. But that was my fault. Kids loved it!! Thanks a lot!

To Die For Blueberry Muffins

Reviewed: Jan. 20, 2008
E-X-C-E-L-L-E-N-T! Did look over reviews and then make tweeks accordingly: 1 1/2 cups flour 1/2 cup white sugar 1/4 cup brown sugar 2 teaspoons baking powder 1/4 teaspoon cinnamon 1/3 cup oil 1 egg 1 teaspoon vanilla 1/3 cup milk 1 cup blueberries lightly tossed in flour. filled cups to top for huge breakfast muffins left off crumb topping (was delicious with out it) baked 30 minutes cooled 1 hour before trying to remove from pan RESULT- moist, tender, bakery quality, not too sweet, REAL blueberry flavor, WONDERFUL!

Potato Leek Soup III

Reviewed: Jan. 8, 2008
This recipe was not bad. Made some changes too. Added portobello mushrooms, 2 stalks of celery, parsley, onion powder, 3 slices of bacon, used 1/2 and 1/2 instead of heavy cream, etc. Blended most of the soup at the end to give it a creamy texture but left some chunks to give it some heartiness. I guess my disappointment was really due to I specifically wanting a leek soup recipe, not a combo. I probably will not make again due to the fact that my husband complained it was not my original leek soup, UGH, for the love! ;)

Honey Ginger Shrimp

Reviewed: Dec. 23, 2007
I just tried this for the 1st time and from the very 1st bite my husband took he shout "10 right of the bat!!" I personally loved it too! I only used about 2tsp red pepper and I think it was perfect that way, I love spicy food but using a whole tbsp would've been too over powering. Definitley making this again!
