Shrimp Scampi V

This recipe was a hit with a few adjustments. I used half butter and half EVOO, along with three extra cloves of garlic and 1/2 small onion. I then added 1/2 cup of Prego sauce and about 1/4 teaspoon or less of thyme, basil, marjoram, oregano, and salt. I added a half cup of Riesling, as that was all I had on hand. There was no angel hair pasta in the pantry, so I used Penne Lisce pasta instead. The sauce was amazing! I grated some Parmesan cheese on top and served it with green salad. My family loved it. It was quick and easy to prepare and I will be making it again. Thanks for sharing.

Boilermaker Tailgate Chili

Annie's Fruit Salsa and Cinnamon Chips

Really good appetizer for parties. Try and let this be the very last thing you make before the party starts as it can look a bit "old" after a while. If it lasts!

Tomato Chicken Parmesan

So yummy, I'm not a fan of chicken breast, as I always think it dries out. But this was moist and awesome! I followed the recipe and made no changes, as I didn't feel any were necessary.

Peanut Chocolate Cake

MMM what a wonderful cake. The cake and icing complimented each other perfectly. I followed the recipe as is and the cake came out moist and chocolaty while the icing was surprisingly not as sweet as it looks, with a peanut butter taste which reminds me of the middle of a Reese's cup somewhat. Yummy! I did opt to leave out the finely chopped nuts as garnish cause I knew I wouldn't enjoy it like that. I also made this into a three layer cake, dividing batter evenly among my pans. I found that I did not need to add any milk to get a spreadable consistency on my frosting as well. Thanks for the recipe, it was delightful.

Brazilian White Rice

Yummy! This is a wonderful change from plain rice. I do use brown rice though, but that was the only change I made to this recipe. Very fragrant while cooking. It made a great side for Yummy Honey Chicken Kabobs (recipe also on this site) and I may try half chicken broth next time suggested in the intro for even more flavour. Thanks for sharing!

Easiest Peanut Butter Fudge

I made the recipe as is and it was okay, but extremely sweet, crumbly after it chilled (which surprised me a bit because the consistency was nowhere near crumbly before I chilled it) but it still turned out melt in your mouth. I wish I did follow the other reviewers advice to get a more creamy fudge. This is a good base recipe to start with, but it definitely needs the adjustments to make it 5 star. Thanks for sharing.

Chili-Lime Chicken Kabobs

It has great potential. Substituted Vegetable Oil, Apple Cider Vinegar. Added zest of the lime, 2 cloves of Garlic, 1/4 teaspoon Cayenne pepper, Bandania/Shadon Bennie (Cilantro), Soy Sauce, Worcestershire Sauce. Marinated for about 24hours. I also broiled it on a sheet without the skewers. Next time I'll save the marinade and brush the chicken while it is broiling so it doesn't dry out. Love a lot of flavor to my food and couldn't bear having to waste another recipe, so I added extras just in case. Served with Roasted Veggies (Zucchini, Green Pepper, Red Onion), with some of the spices from the marinade and Teriyaki Sauce. Also Hot Potato and Perfect Rice. Adding some chili powder in both rice and potato for extra flavor. Also added some Pineapple chunks for some sweetness right from the can to the plate.

Irish Soda Bread I

I have been making this for years and it's always a hit. It is definitely more cake-like then typical soda bread, but I prefer that to the typical rock hard that I've grown accustomed to. Make this, but be prepared to get critiques from your strict Irish friends who like the dry bread they are used to.

Anniversary Chicken I

It sounds like an odd combination, but it came out tasting awesome. I used bone-in chicken breast with thigh and legs and baked it on low, this made the meat fall off of the bone and the taste was incredible. I will definitely be making this over and over again.

Jiffy Cinnamon Rolls

These were quick but nothing compared to the yeast rolls. Used only little over 1/2 cup milk so suggest you add a little at a time not to get a wet dough to work with. It is a biscuit roll so expect nothing more than that but a good one tho. I placed all the filling in the roll and used a 9inch cake tin greased to bake it in. Cud be a bit crumbly so take care when taking out soon after baking. Will make if in a pinch but really prefer the yeast rolls feels more substantial than pastry type one.

Spice Baked Rice

Tops for quick and easy. I had to use 1tin of diced tomatoes, 1tin of tomato soup with 1/2 tin water to sub for the tomato juice also used pimento peppers and black pepper instead of chili. 2cups rice since I thought 3 too much. Also used ground chicken instead. All these changes were due to the fact I did not have all at hand and the chili was necessaary however didn't know I was out till to late. Also did put in some garlic with the onions. With all these changes it still came out pretty well and will make again with the correct ingredients except always will use minced chicken. I think minced soya will also do well like Yves brand.

Double Layer Pumpkin Cheesecake

Great recipe! I made this for Thanksgiving and added a pinch of ground cloves and a teaspoon of vanilla extract to the pumpkin mixture. I used a gingersnap crust. This cheese cake had the perfect blend of spices and awesome flavor.

Sweet Potato Casserole II

Wonderful flavor. My sweet potatoes mashed up fairly dry, so I added some evaporated milk to make them creamier, before adding the other ingredients. In the past, I've made candied sweet potatoes, but this recipe is easier and just as flavorful. And guests loved the slight orange flavor, so I guess it's just personal preference. Try it out before eliminating the juice.
