Peanut Butter Bites by BHG.com

Reviewed: Nov. 14, 2009
I linked this recipe from BHG.com and made a test run of them to add to my Christmas cookie tray this year. They are absolutely delicious! I stored mine in an airtight container and stored at room temperature. The cookie is light with a fragrant peanut butter aroma and we all know chocolate and peanut butter is a heavenly combination. I made homemade mini pb cups using the filling from Spooky Halloween Eyeballs (recipe on this site) but using milk chocolate. Awesome!

Baked Zucchini Chips

Reviewed: Nov. 13, 2009
The breadcrumb mix can use some more seasoning... like garlic powder and onion powder...maybe more parmesan. These are good though. I like that they are baked and not fried but still taste nice and crunchy. I served them with a garlicky mayoketchup dip that is very popular in PR (basically equal parts of mayo and ketchup with a pressed garlic clove or garlic powder mixed in).

Tomato Chicken Parmesan

Reviewed: Nov. 12, 2009
Stupid me thought that I had parmesan in the fridge and guess what... I had used it all. SO...lazy me didn't go to the store and just skipped the parmesan. Yep, chicken parmesan WITHOUT the parmesan. A sin. Forgive me. Instead of Monterey I used shredded mozarella. I pounded the chicken thin and added twice as much sauce because we LOVE sauce. Served it with spagetti ... Yum Yum. It turned out pretty awesome. Of course, with parmesan (like it is supposed to be) would be even better. Quick, easy and flavorful = I'm happy.

Easy Tuna Casserole

5 stars for simplicity and I liked the idea of using french fried onions since I was out of bread crumbs. Alterations: I had no cheese but I did have two boxes of mac-n-cheese. Added some chives, celery, pepper, and parsley. That was it. Thank you, because my boys who are 6 and 4 years in age give me daily grief when it comes to meals, they hate this!! ;)

Spooky Halloween Eyeballs

Reviewed: Nov. 12, 2009
First off, I love this idea. Very creative. I did not make eyeballs though - I made mini pb cups. The only reason I tried this recipe is because I saw some reviews say they taste exactly like the store bought PB cups and boy, they were right! I almost couldn't believe it. Since I ran out of chocolate along the way I just stuck the rest in a lined pan and stuck it in the freezer to cut into squares later on. Delicious, but the mixture sure does soften quickly after it exits a cold environment. Either way, I enjoyed these. Made the cups to make some cookies and they turned out fabulous. Thanks for sharing.

Chocolate Truffles With Liqueur - 17701 - RecipeZaar

MMM...my favourite truffle recipe. So creamy and delicious. The liqueur flavour is very prominent when you first make it but after it sits overnight it really melds nicely. I rolled my truffles in finely grated milk chocolate and it was very good like that! I used Irish Creme Liqueur in mine.

I love this dish! I couldn't believe how flavourful and delicious it was for something so simple. I like to use the black pepper and red pepper flakes for my seasoning because it suits my personal taste. Very quick and easy recipe for lunch or dinner.

Very rich and delicious custard based ice cream. This recipe actually reminds me of Bluebell's Cookies 'n Cream flavour - which I absolutely love btw! So it was great finding a recipe which seemed so close to it yet just surpassed it a little (must be because it's homemade) I like lots of cookie chunks in my ice cream so I add in extra. Very delicious, creamy, mmm.

I absolutely love this recipe. Heavenly! I used the cookie recipe which I added in the notes section but I make sure it's chilled first so I can break it apart like the recipe says to do with the store bought dough. Got to try it! So delicious!

Moose Tracks Ice Cream Recipe - Domestic Pursuits

Reviewed: Nov. 11, 2009
I made this recipe using all full fat ingredients, 1 egg to replace 1/4 cup egg beaters and Nestle Condensed Milk (I find some other brands of condensed milk aren't as sweet) Instead of buying peanut butter cups I made my own using Peanut Butter Bars I from this site and cutting them into small chunks. I also omitted the chocolate chunks and used a homemade chocolate fudge for a more soft consistency rather than biting into hard chunks of chocolate in my ice cream. This recipe is awesome! So good! Yum! Oh P.S. I've never had store-bought Moose Track Ice Cream before so can't compare the recipe with it.

Great! I don't like them too crispy so I cut them with a regular kitchen knife rather than a mandolin or the food processor blade. I reserve the salt for right after frying and I use sea salt. Delicious!

Bacon-Roasted Chicken with Potatoes

Reviewed: Nov. 9, 2009
MMM this came out delicious! I used chicken breasts and I cut them into thigh-sized pieces then wrapped each with bacon strips (I used turkey bacon.) I didn't have yellow potatoes so I used the white ones. The seasonings on this was delicious and I added a sprinkle of cayenne because I like heat. The potatoes were just the way I like them (melt-in-your-mouth good!) and to get my bacon slightly crisp I turned on the broiler at the end for a while. Only the top side of the bacon got crisp and rest remained a bit soft but I enjoyed it that way. Thanks for sharing!

Very good and easy. However, I like to use fresh pressed garlic instead of garlic powder. I sautee it with the butter. I added shrimp to the sauce at the end and then stirred in some cooked penne pasta. Yummy.

Maple-Balsamic Vinaigrette

Loved this recipe. I adjusted the recipe a bit because I use it sparingly - I used a 1:1:2 ratio for the maple syrup, balsamic vinegar and oil respectively. Used this on my fav salad with greens, goat cheese and dates. Perfection!

really tasty and simple to make..I added sauteed celery and carrots and used vegetable stock for the water..did not want the fat from the cream so subbed fat-free evaporated milk and also added a handful of frozen corn for more texture.. will make this again, thanks
