Sweet Potato Pie II

This sweet potato pie is made very creamy with evaporated milk and gets a bit of a kick with rum. Along with sugar, salt, cinnamon, nutmeg, eggs and butter, all the ingredients are put into a food processor and blended until very smooth. Then the filling goes into a pie crust and bakes for less than an hour.

Thumbprint cookies with a delicious filling, these are perfect for Christmas. Does not use eggnog, but they have an eggnog taste. You can substitute 1/4 teaspoon rum extract and 1 tablespoon milk for the rum.

I attend an annual St. Patty's Day party and this is the dish I'm always asked to bring... and I'm happy to say that the bowl comes home empty every time!
