Light Oat Bread

I have finally found my family's favorite bread...Its one we can all agree on. The first time I made this we sat at the table and ate it all hot from the breadmachine. I have since made it several times. I do however use butter instead of margarine; I also added about 3-tbsp honey to the recipe...Very delicious.

Oven Scrambled Eggs

Wow! I will never go back to making scrambled the old fashioned way. This is a good basic recipe that comes out perfect everytime. I usually add the following: 1/4-tsp black pepper, 1/2-tsp crushed red pepper, 1-tsp dried parsley and 8oz package of Kraft Crumbles Mexican Blend Cheese. I like the crumbles instead of shredded because you get a more cheesy bite. I also sometimes add cubed ham or pork sausage. I highly recommend it.

Chantal's New York Cheesecake

OK...WOW!!!! This is one delicious cheesecake. One minor change; I substituted 1-can sweetened condensed milk for the sugar...It makes for a more creamy texture. I also baked it in a moist oven (place a large pan of hot water on the rack directly below the cheesecake about 20 minutes prior to putting the cheesecake in the oven -- this warms up and creates moisture in the oven). I baked it for 1-hour without opening the oven then when I turned the oven off I left the cheesecake in the oven for 5-hours then refrigerated it. It came out perfectly and was sooo yummy. BTW, do not overbeat the mix otherwise the cheesecake will crack.

Baked Teriyaki Chicken

Followed the ingredients exactly....However instead of brushing the sauce on I dipped the chicken in the sauce to coat then place it on a foil lined baking pan and poured the remaining sauce over it and marinated it for about 6 hours then baked covered in a 400 degree oven for 30 mins then uncovered for another 30 minutes. It was very good. Although hubby said it tasted like BBQ Chicken as opposed to Teriyaki.

Chickpea Curry

This is quite good. I followed the recipe exactly with a few minor changes...I used Extra Virgin Olive Oil instead of Vegetable Oil; 1-Tsp Ground Ginger instead of Ginger Root; 1/2-Tsp Ground Cloves instead of Whole Cloves and 1-Tsp Ground Cinnamon instead of Cinnamon Sticks. Let it simmer for about 45 minutes. Served it over White Rice. This dish is definitely a keeper.

Absolute Mexican Cornbread

This cornbread is really good. Its moist and full of flavor. I doubled the recipe except the following ingredients: I used only 1-cup butter; 1 cup brown sugar; 6 eggs; 6 teaspoons baking powder; 1/4 teaspoon salt. I also did not use the Chile peppers because my SIL cannot eat spicy foods and did not want to risk it. After mixing the batter, I let it stand for 20 minutes so it would crown before pouring into the pan. This was served to my inlaws and they just raved about it...The whole thing was eaten in under 30 minutes. Thanks for the recipe...again, very good.

Good Old Fashioned Pancakes

Wow, these were absolutely fantastic. I read many reviews before I made these so I made some changes to the recipe based on all the reviews......I doubled the recipe and made the following changes. I used 4-teaspoons baking powder, 1-teaspoon cinnamon, 1/2-teaspoon nutmeg, 1-tablespoon vanilla, 1/2-teaspoon salt, 3-cups milk, 3 eggs lightly beaten and 1-stick butter......I melted the butter then added the milk to the butter and heated it (just heat, do not boil). So I had 3 bowls - 1 with the dry ingredients all sifted together, 1 with the warm liquids and 1 with the eggs lightly beaten. I then added the liquids to the dry ingredients and mixed a bit then added the eggs to the mixture. Mixed with a wire wisk until it was well blended together. I let it sit on the counter for 10-minutes before cooking. Served with bacon and eggs. This was made for 4-people and none was left. The kids told me these are best pancakes they have ever had and to never use bisquick again. Thank you so much for the fine recipe. Its a keeper.

Downeast Maine Pumpkin Bread

I've made this twice - the first one I followed the recipe exactly, except I also added a teaspoon of vanilla. The second time I made this I cheated a bit...I used a box of yellow cake mix + 1 cup bisquick and I used a 29 ounce can of pumpkin. Both were equally as delicious. However my family prefered the one with more pumpkin because it was very, very moist and they said it tasted like pudding. In fact my husband and kids put it in the ice cream maker and made pumpkin ice cream. Can you say yummy. This is definitely a keeper. Thank you for the recipe.

Creme Brulee French Toast

Made this yesterday for my husbands birthday brunch...It turned out fantastic and everyone loved it. Made a few minor changes and used just what I had on hand...I didnt have corn syrup so I used maple syrup instead. Didnt have french bread so I used Pepperidge Farm Cinnamon and Raisin bread (cubed). I didnt have GrandMarnier so I used regular Brandy. I also added an 8-oz pkg of cream cheese to the milk mixture. It turned out really well. Hubby and the kids really enjoyed it. I already have requests to make it again.

Bread Machine Rolls

These are easy to make and taste wonderful...Thanks for the recipe. I did add 1-tsp Italian Seasoning and I also eliminated the salt and added 1-tbsp grated Parmesan Cheese. I also allowed them to rise twice as long as noted in the recipe. The result was lighter, softer rolls.

Cajun Red Snapper

This was really great....a bit spicy but we love spicy. I rubbed the seasoning on the fish and let it marinade in the refrigerator for an hour then I baked it in a 350 degree oven for 20 minutes (lightly grease baking pan). Served over broccoli/cheese rice with a side of spinach. YUMMY!

Strawberries with Balsamic Vinegar

Absolutely delicious...I really love strawberries and usually just dip them in sugar to eat them. My husband recently went to costco and came back with 5 pounds of strawberries and I didn't know what to do with them so I went in search of a recipe. When I found this recipe, I was a bit skeptical...I mean really vinegar marinated strawberries...Well, I made them and they were delicious. It is now my husbands favorite strawberry recipe; he has requested and I have made it several times since the first batch. With all this strawberry it did take us several days to eat it, but I found that the longer it sat in the marinade the better it tasted. So now I marinade it for 2-3 days. Serve with ice cream, eat alone or just top your favorite anything really. YUMMY!!!

Ive made this recipe a number of times, mostly summer and thanksgiving and it is delectable!!! Not only is it quick but If your looking for something fluffy, delicious and just right this is it...and for added treats I added whipped cream and some fruits to top it off (kiwi, peaches and cherries)

Dutch Apple Pie

My husband is an apple pie/crisp/cobbler fan and he LOVED this recipe! It had plenty of "crunchy stuff" he said! :0) I added a few pinches of cinnamon and nutmeg to the sugar mixture while it was on the stove. I also added 1Tbsp tapioca to thicken. Served with caramel spooned over the top with scoops of vanilla bean ice cream. Made for a gorgeous presentation. Will definitely make again.

Grandma VanDoren's White Bread

This was the first time I have ever made bread from scratch and my husband loved it. I did add a little more sugar. And....I split into 3 loaves, baked two and made cinnamon rolls with the other. Absolutely delish! Next time I make this recipe I am going to try and make it a little more dense as the bread was a little too fluffy. Can't use it for sandwich bread or french toast. Great recipe!!

Chocolate Chocolate Chip Cake Cookies

This recipe is way too sweet for my taste. The second time around I only used 1 cup of semi-sweet chocolate chips and 1/3 cup unsweetened cocoa powder. Everyone prefers it this way except I should have added flour to replace the cocoa powder I left out. With the added flour I suspect the cookies wouldn't have crumbled so easily. With the modifications the taste was great otherwise you may have sugar shock. DO NOT FLATTEN COOKIES IN ANY WAY! Drop using a spoon and cookies will spread adequately when baking. I'll let you know how the third attempt goes.

I made this cheesecake again to see if it would be as good the second time around. I have had no complaints, everyone loves this cheesecake and there is never enough. Ensure that the cream cheese is at room temperature and always use a water bath. This cheesecake is too good to be true.

Banana Loaf Cake I

A wonderful basic recipe. Being from the caribbean I love spices and took the advice of others and added cinnamon, allspice , almond extract and an extra egg. I am also cutting back on sugar so I used 1/2 cup white sugar and 1/4 cup brown sugar. Everyone loves this recipe, this is great for beginners.

Spiced Yogurt Pound Cake

I have tried this recipe twice and it is definitely too dense. I don't know if it is too much butter or too much yogurt but there is definately too much of something in this pound cake. I have given up on this recipe and I am on the look out for a lighter pound cake.
