very good recipe,even though i dont eat mango everyone loved it .i added a tablespoon of honey n ginger to the marinade to enhance the flavour you know giving it that good old island kick (lol) n it was good!

Creamy Pomegranate Ice Cream

A simple ice-cream recipe n very delicious.I substitute cherry juice for pomegrante n it was great,i like the fact that you can use almost any of your favourite juices n it will come out great.Thumbs up to Peaches n her boys i suspect u won with this!!!!

Golden Rum Cake

This cake was great! The only thing I did differently was use white Jamaican rum in the batter,and for the glaze I used a dark Jamaican brandy. But absolutely no changes required, this was super moist,tasty,and the hit at any occasion.

Beer Bread I

I have never had beer bread before, so when saw this recipe it sounded delicious and easy enough. I was right, it is super fast and couldn't be easier to make. I don't usually have self rising flour on hand so I made my own by combining 1 cup flour and 1 tbsp baking powder. The only beer I had on hand at the time was a case of Samuel Adams after going thru them my son and I decided on the Sam Adams Chocolate Beer -- definitely the perfect choice. Oh yes, I increased the sugar to 1/3 cup as noted by a few other reviewers. The next time I made it I followed some other suggestions and added a cup of Mexican Blend and Cheddar Jack Cheeses. Thats also good. This recipe is definitely a keeper. My husband and son ask for it all the time.

Golden Rum Cake

This cake is really good. I made it when my sisters their husbands and children/grandchildren visited and everyone asked for the recipe. For the most part I followed the recipe exactly as is except for a few minor changes.... 1. I only had Captain Morgan Tatoo (dark rum) on hand, so thats what I used. It is incredibly flavorful. 2. Eliminated the nuts......I don't like nuts but no one missed the nuts. 3. I replaced the run called for in the glaze with Orange Juice since I am allergic to alcohol (unless its cooked off). Again, a fantastic cake. It is definitely a keeper in my house. Will be making it again.

To Die For Blueberry Muffins

Exceptional recipe! I added vanilla beans, a dash of nutmeg and a splash of cinnamon to the batter, all which added a lot of flavor. One thing that I would implement the next time I make these muffins is to melt the butter for the cinnamon-sugar streusel topping instead of mashing it. That step was time consuming. Also, I should have ignored every one (well most every one) elses reviews about there being too much streusel. I was conservative with mine and my muffins would have been much more beautiful and tasty had I used all of it. Thanks for posting such a delish recipe.

Apple Dumplings I

I dont eat apples, but my husband and son really loves anything with apples. So I made this for them. Well, they truly loved it...they raved about it and have since asked me to make it several times. I did follow the suggestions of others and diced the apples then dipped them in a sugar, cinnamon mixture then wrapped them in dough the with a pat of butter. I also used 1/2 white and 1/2 brown sugar and I heat the sauce over medium heat until bubbly (but do not boil)..Hubby said its the best apple dumpling he has ever had. Thank you for the recipe and suggestions.

Light Oat Bread

I have finally found my family's favorite bread...Its one we can all agree on. The first time I made this we sat at the table and ate it all hot from the breadmachine. I have since made it several times. I do however use butter instead of margarine; I also added about 3-tbsp honey to the recipe...Very delicious.
