I found it to be a little sour like, I am sure it was the canned pumpkin, so I will use butternut squash if I try to make it again. I always use it for my regular black bean soup.

Yep, this is the original recipe my family has used forever. The only thing is that when making the caramel, I also add 1/4 cup of water to the sugar and make sure that I keep the sides of the pan moist by dipping a brush into a bit of water avoiding the crystalization of the sugar and the evaporization of it. You'll also get a lot of caramel this way. And the covering isn't really necessary. I've been making flan this way for 20 years. It is so creamy and EVERYONE loves it!!!

Cranberry Oat Bread

AWESOME I followed the recipe but added 2/3 cups cransins cuz I like lots of fruit. I served it with homemade rhubarb, raspberry, blueberry jam and my hubby couldn't get enough. I'll definitely make this one again!

Sweet and Sour Meatballs I

20 years ago I used to make this as meatballs without the lemon juice. Then we decided we liked it too much to putz around with the balls, I started making it as meatloaf and setting the sauce on the side. Today I am known far and wide for my meatloaf. The sauce is also good on baked potatoes.

Lentil Soup

wonderful! I was very happy with the flavor and the whole family loved it. I added artichoke-mozzarella chicken sausages from our local Sam's Club and that completed the meal. This one is a keeper. Used red wine vinegar since the recipe did not specify.

Pizza Casserole

I made this recipe with ground chicken instead of hamburger and pepperoni, I used extra sauce also, and I used Jalapeno cheese instead of mozz to give it an extra kick, everyone loved it. Oh yeah we can't get egg noodles here, so I used small thin bow tie pasta.

Amber's Sesame Chicken

very, very good! Definetely a keeper. The only thing I would change is adding the sesame to the flour. It did not adhere to the chicken, so I thought it was a waste. Also, because the sauce is so good, I would double the amount. The end result was very tasty indeed.

Aztec Casserole

I live in the Dominican Republic, and therefore can not get enchilada sauce. I made this recipe using salsa instead, and ommitted the jalapenos and EVERYONE loves it. If I ever return to the states I will try it with enchilada sauce, and re-review it. For now it is awesome with the salsa.
