Originally named Las Tortugas for the turtles that can be found sunning themselves along the beaches, the Cayman Islands were eventually named after an indigenous crocodile called “Caymanas.” The islands’ calm, warm waters, with 100ft. plus visibility, make scuba diving huge here. Grand Cayman opened the Caribbean’s first scuba dive shop in 1957, and the Caymans have remained a top destination spot for scuba enthusiasts around the world. Food in the Cayman Islands has a strong Jamaican influence whether it be jerk seasoning or salt fish with ackee. Generally, you’ll find a lot of seafood—turtle steaks are considered a delicacy and conch is a local favorite, though fish is the most abundant. Most seafood is broiled or baked “Cayman style” which means it is topped with onion, pepper and tomato. Just remember to wait a half hour after you eat to go scuba diving!

Gingerbread Biscotti

I made this exactly as the recipe intructs. It was very sticky. I think these are delicious and I like the texture. I am going to make myself another batch and try the black pepper recommendation.

Came out just like South African Melktert, my South African husband was proud! However I used full cream milk and doubled the filling. And would suggest piercing the crust with a fork before baking.

White Chocolate Snack Mix

I scaled this down to 3 servings, and it was more than enough. Used raw peanuts instead of salted because that is all I had in the house. This is very good and very easy to make. I didn't find it to be the "couldn't stop eating it" concoction, but I like it.
