Bahamas

The Bahamas are a necklace of islands and tiny cays stretching 500 miles in glittering blue Caribbean waters. To imagine the food of the Bahamas, think of all that the sea has to offer, cross it with English and African traditions, and season with the hot spices typical of the Caribbean. This is how pigeon peas and rice come to be on the same menu as conch fritters, and sturdy fish and grits make a typical breakfast. Unique to the Bahamas is souse, a soup of onions, lime juice, celery, peppers and meat. Queen conch, the large ocean mollusk, becomes chowder, salad, stew, fritters, or deep-fried cracked conch. Islanders enjoy snapper, grouper, rock lobster, and locally grown coconuts, mangoes, breadfruit, pineapples, and papaya. Most local drinks are based on rum, but Bahamians are also proud of Kalik, their national beer, and coconut water, a drink of sweet milk and gin.

Green Bean Salad

Awesome!!! I just made this salad, even though I didn't have all the ingredients. I had frozen green beans, and frozen mixed vegs, onions, vinegar used olive oil, sugar, salt & crushed red pepper. Will make this again these ingredients I always have on hand.

Curry Broccoli Salad

I love broccoli so I really enjoyed this salad. I tweaked it base on what I had available. I used lowfat yogurt instead of mayo, I didn't have any raisins so I peeled and chop an apple, shredded a carrot and used dry roasted peanuts. Spiced it up with a little more curry, cayenne pepper and let it sit for a couple of hours. Great salad, pretty too!
