Tilapia with Creamy Sauce

Tilapia is not common in my country so I used a mild, white fish (hammour). I didn't not put on lemon pepper (since I don't have any) and just dashed freshly ground sea salt & pepper on the fish. I followed another reviewer and toned down the lemon in sauce. Next time I will cut it in half. The best part of the meal is that my hubby and 6 year old each had at least a 5 oz portion and my 4 year old liked it too.

Best Big, Fat, Chewy Chocolate Chip Cookie

I never thought I'd say it, but I had to cut the chips to 1.5 cups the second time I made these, and they're still super chocolatey. Also, I use a cookie scoop that's about half the size of the recommended 1/4 cup, and bake for 14-15 mins. They're best eaten within a day or two of baking as they went crunchy pretty easily, even in tupperware.

Easy Fried Eggplant

This was great! I removed the bitter juice beforehand by heavily salting the slices and letting them sweat for 30 mins, then rinsed and dried before dipping into the egg. For a fun variation, I added a tablespoon of curry powder to the breadcrumbs, and mixed plain yogurt with ground coriander to serve alongside as a dipping sauce.

Gourmet Mushroom Risotto

A great staple in my recipe box. It always takes about 2 more cups of broth to get it cooked through. Also added a few handfuls of chopped spinach with the mushrooms at the end so it wilts slightly. Enough for a meal on it's own!

Strawberry Muffins

very nice and easy to make for an evening snack. just baked these with no great modifications except 1 tspn vanilla and a few drops of strawberry essence. used frozen strawberries which i thawed,squezed to remove excess water and them little with my hands since my kids dont like whole pieces.a very tasty muffin for sure .

Chicken Breasts with Balsamic Vinegar and Garlic

Good. Easy. I didn't put mushrooms in because we don't like them and it was still very tasty. I also didn't flour chicken but pounded it out a bit. Thew the whole bit over pasta and loved it.

David's Yellow Cake

SOOO good! Box cakes are full of preservatives and junk you can't pronouce. Make a real cake from natural ingredients, it's so simple with a great recipe like this. I used 4 whole eggs as another had suggested instead of 8 egg yolks and it was perfect. DO NOT forget to beat that butter and sugar for several minutes at least until it turns that very pale yellow and becomes creamy and whipped. I don't know exactly what it does to the batter but it keeps the cake moist and makes a real difference in the outcome. I didn't frost it, just sprinkled powdered sugar on top and it was perfect for our (my daughters and me) little tea party!

Rolled Buttercream Fondant

This was my first fondant experience and it turned out well. It made SO MUCH! I dyed the dough black to make darth vador heads for cupcakes for my sons class. It was greasy and time consuming but well worth the hassle. By the way...I agree with original recipe and people's comment about sifting sugar.

Pumpkin Oatmeal

I use half milk and half water and old fashion oats and cook it on the stovetop. It takes a little longer but I prefer the chewiness of the bigger oats. I drizzle a big spoon of honey on top and don't forget the raisins! I am FULL for several hours after this healthy breakfast.

One Bowl Chocolate Cake III

i followed the recipe word by word but the center didnt cook at all.though i baked all the batter in a springform pan. tastes very good with a great chocolatey taste but the center was very gooey ,didnt cook at all even after 45 min.it rose well. the top was hard.so i had to cut the cake leaving the center.iam giving this 4 stars since the the kids loved it and the cake didnt get wasted. i will still try this for its chocolatey taste next time and post my views again.

Peppermint Brittle

I received good feedback on this treat but I thought it wasn't that great. I grew up making my peppermint brittle with a few drops of mint extract but couldn't find it in this country. If you can get your hands on that then put some drops in to give it a boost.

Shrimp and Crab Bisque

I feel bad for giving this such a low rating because I didn't follow the recipe at all. My husband and I have been craving crab bisque after watching the "Soup Nazi" from Seinfeld and so I tried to make it but with cutting the fat and calories in half. Not a good idea. My suggestion would be to follow the recipe and prepare your waistline.

Spinach Salad with Red Potatoes

I picked this salad for the good, healthy nutrition value to it. It was a really nice salad with layers of flavor. I followed the recipe exactly and would do the same again except double the dressing if it were for company. For the nutrition that it offers is fine for our family but could use a zip with more dressing if serving to company.

Vegetables with Brown Rice

I'm trying to lower my LDL cholesterol and lose weight so this caught my eye for the nutrition info. I was worried that I would have to choke down each bite but found it rather delicious. I forgot to put the red pepper in and increased zucchini instead of adding squash. Also, I threw in a frozen mixed veggie instead of peas only. The other difference I made was cut salt in half but add about 1 tsp of soy sauce. Separated it into fourths, ate one section and then packed the other three away for lunch this week. The walnuts are what make this dish wonderful so don't forget them. Thanks!(you need to double nutrition info if you split it into four sections)
