Best Big, Fat, Chewy Chocolate Chip Cookie

I never thought I'd say it, but I had to cut the chips to 1.5 cups the second time I made these, and they're still super chocolatey. Also, I use a cookie scoop that's about half the size of the recommended 1/4 cup, and bake for 14-15 mins. They're best eaten within a day or two of baking as they went crunchy pretty easily, even in tupperware.

Easy Fried Eggplant

This was great! I removed the bitter juice beforehand by heavily salting the slices and letting them sweat for 30 mins, then rinsed and dried before dipping into the egg. For a fun variation, I added a tablespoon of curry powder to the breadcrumbs, and mixed plain yogurt with ground coriander to serve alongside as a dipping sauce.

Gourmet Mushroom Risotto

A great staple in my recipe box. It always takes about 2 more cups of broth to get it cooked through. Also added a few handfuls of chopped spinach with the mushrooms at the end so it wilts slightly. Enough for a meal on it's own!

Baklava

First time making baklava...was a lot easier than I thought. I used half walnuts, half pecans, all chopped pretty fine. I did overcook the syrup a bit and after everything had cooled, it was very sticky but still tasty.

Pizza Pinwheels

I was worried about the technique as I never had much luck working with pastry dough of any kind, but I followed the recommendations to freeze the tube for 15 minutes before working with the dough, then chilled the rolls overnight before slicing and baking. Quadrupled the recipe for a party of 30. I made half with diced pepperoni and mozzerella, and half "veggie" with marinated artichokes, minced garlic, chopped black olives and mozzerella. Served with pizza sauce to dip and this was the first dish gone at the party.

It is a reliable recipe; I added more onion and 1.5 egg. They were very easy to make but next time, I will add shredded carrot and pulsed fava beans to make it more nutritous.

Banana Crumb Muffins

Great recipe! I did substitute 1/3 cup oil instead of melted butter. Also added a pinch of cinnamon, a pint of blueberries and a cup of chopped walnuts to the batter, and 1/2 cup of walnuts to the topping (which I almost doubled). Made 12 perfect muffins, batter poured to almost the top of the rim.

White Peach Sangria

5 stars with my tweaks: I omitted the sugar, used Peach Schnapps, and sliced white nectarines as I wasn't a fan of the fuzzy peach skin in my drink. I let it sit for almost 24 hours before serving it over ice and frozen grapes cut with a 1:1 ratio of Ginger Ale. The drink was smooth and the fruit was deadly. Guests loved it!

Mini Cheesecakes I

These were exactly what I needed for a BBQ! Easy to make, quick to bake and impressive once decorated. I used a simple graham crust (graham crumbs, butter, sugar and cinnamon), and added lemon zest to the batter. I chilled them overnight before topping 1/3 with fresh sliced strawberries, 1/3 with fresh bluberries and 1/3 with sour cream. Red, white and blue for 4th of July. Were they the best cheesecakes I've ever had? No. But they were tasty, easy to serve, and the guests loved them.

Amy's Cilantro Cream Sauce

I almost tripled this recipe for a BBQ and didn't change much besides adding a bit more cumin and garlic to taste and used an immersion blender as there was too much to fit in a food processor. It was fantastic served with seasoned pita chips and sliced veggies, but guests quickly adopted the idea of pouring it over the chicken and beef skewers that were coming off the grill. I've already shared the recipe with many of the guests and it's an immediate staple for myself. 7/28: New use! I poured some of the cilantro sauce over cooked, cubed chicken breast, 1/2 cup black beans, 1/2 cup corn, 1/2 cup sliced jicama, 1/4 cup roasted red peppers and 1/4 cup chopped olives. Serve chilled with mini pita pockets for a GREAT "southwest" style chicken salad filling.

Chewy Chocolate Chip Oatmeal Cookies

I think I've found "my" cookie, these are exactly what I want...buttery, chocolatey, brown sugar, chewy, not too sweet and great texture. It loses a star only because of the modifications needed to the original recipe: Reading all the reviews, I did as suggested and used 1.5 cups flour, 1 tsp baking soda, and 0.5 tsp salt. Also, I only had 0.5 cup diced walnuts, and mini-chocolate chips. Baked for 13-14 minutes at 325. Really perfect. I think I'm done looking.

Easy Rum Cake

Wonderful cake. Used "butter recipe white" mix as that's what I had, and sprinkled chopped unsalted pecans in the center. I'll do that again, but will sprinkle some cinnamon sugar over the nuts before topping with the rest of the batter. Also poured half the glaze over the bottom of the cake to soak, then flipped it onto a plate and topped with the rest. It was thoroughly soaked...next time I'll just pour it on top since the bottom half was really overwhelmingly strong.

Big Soft Ginger Cookies

The BEST flavor and texture. Spicy, dark and not too sweet. Made the recipe as is, but I was in a rush and made them too big (over 3 inches across), and the cookies became extremely fragile and would fall apart in half when picked up. Didn't affect the flavor at all, but do make sure they stay on the medium/small side.

Best Chocolate Chip Cookies

Good cookies using the recipe as is. They did not turn out "crispy edges, chewy middles" at all, and I followed the directions exactly. The last 2 pans I fiddled with the baking time, but it didn't change much. They're pretty, uniform, but pale and even colored from tip to center, which isn't what I'm looking for. I made a second batch using the 1.5 cups brown/0.5 cup white sugar change, and they tasted stale on the second day. I want ones that look like the title picture!

Oven Roasted Red Potatoes

Fantastic! I made this for a party of 20. The only addition was some chopped, lightly sauteed yellow onion to the mix before baking. And I kept baking until the smaller pieces were crispy...about an hour.

Iced Pumpkin Cookies

FANTASTIC cookies. I went ahead and added the whole 15oz can of pumpkin (instead of just a cup), and added some cinnamon to the glaze and drizzled it over the cookies. They came out perfect. Will be a staple! EDITED: Made these again and froze about half of the already-iced cookies in saran wrap for about 2 weeks. They thaw out very quickly (fridge or countertop), and are just as good as freshly made.

Libby's® Pumpkin Pecan Pie

It was just alright. It did form 2 separate layers, but the pecan filling kind of seeped into the pumpkin, making it very sweet and lost the smooth texture. Not worth skipping 2 separate pies to make this.

Super Moist Pumpkin Bread

Great flavor...the texture isn't as dense and moist as I thought it would be. Still, a very good pumpkin bread! (I didn't have the shredded coconut so it was left out - but I doubt it had that much of an impact on texture).
