Almond-Crusted Halibut Crystal Symphony

I had read the reviews that said this was too much work, but really boiling it down was simple - i could do that without even watching it... from there you just added the cream and butter. Simple! The recipe just looks intense but it's not hard! I only gave it 4 stars though because I did end up having to add a little salt/pepper to add to the flavor. I also added a little chicken bullion to give it more "umph" - it did lack a little something.... but it was impressive and really tasty with just a few tweaks. I served it with steamed broccoli and a chipotle roasted corn salsa.... YUM!

World's Best Peanut Butter Fudge

I think that the reason mine crystalized was because I put it in the fridge to try to get it to set - I think that was my mistake. It probably needs to cool on the counter. Also - I didn't give this more stars because it seemed like *WAY* too much sugar and not enough peanut butter. I think to be fair I'll give it one more try and see if I can get the desired effect.

Crab Quiche

I'm not the hugest fan of imitation crab, however, living overseas it isn't always available so.... instead of substituting real crab which is expensive anyway - I made this quiche as written (not an everyday occurence I might add! HA!) The only I did change which is standard for me is that I am unable to get a premade crust here and just can't seem to make a decent crust (I vow to learn someday) so.... I always just add 1/4 flour to any quiche recipe and *voila*...it makes a CRUSTLESS QUICHE! Super simple and always fabulous! If I could have I would have substituted the crabmeat, but even without the real stuff my 5 year old son was requesting THIRDS! ***** I also sliced the imitation crab thinly so the whole texture of it didn't bother me as much***

Boston Baked Beans

This was a GREAT base recipe! I kinda "wung it" and took a bag of kidney beans and a bag of white beans... soaked them in a large bowl until they had expanded and ended up having to take some out so that I would have room in my (6 qt)crock pot. After soaking, I reserved some of the liquid and put the sauce together by taste on the stove. (I did add a touch of vinegar but not much and I also ran out of the dry mustard so I added a few TBS of dijon to deepen the flavor) After the sauce came together I poured it into the bottom of the crock pot, added a full pound of chopped bacon and 2 onions (chopped) and stirred it all together with the beans and then added a little of the reserved liquid from the water the beans soaked in to cover the beans. I cooked them on HIGH for two hours and then turned the beans down to LOW and allowed them to cook slowly overnight. When I woke up the beans tasted GREAT, but had a little too much liquid so I left them on LOW and took the lid off so that the liquid would evaporate some. I did add one more chopped onion after I turned it off for some texture. So excited! I made my first baked beans from scratch! I always wondered if I could and they taste GREAT! It's a great recipe for when you are making baked beans for a crowd. If it was just for my family - I think opening up a can of Bushes Baked Beans and adding a few things would do the trick!

Bird Seed Energy Bars

I love finding *healthy* snack choices for my family and although I usually don't try recipes that haven't been reviewed already, I thought I would try my luck... so glad I did! These were great! I did tell my kids they were "CHOCOLATE CHIP bird seed bars" and that did the trick! I did only give it 4 stars because the bars could have used a little more egg or something to stick better... I was nervous that they would taste a little "cardboard" because they only used whole wheat flour but they were fine just as written. I might try using half oil and half applesauce to cut down on the oil - if I do, I'll post an update. As is - they are great though! (they remind me a little of my PLAYGROUP GRANOLA BARS! If you like these you'll like those too.)

Roast Sticky Chicken-Rotisserie Style

Thought I'd give this a whirl as it seemed like a breeze to throw in right after lunch for an early dinner... I actually didn't have time (I'm kinda a fly-by-the-seat-of-my-pants kind of girl) to allow the rub to marinate overnight so I was worried that the chicken might be dry, but... IT WAS FABULOUS and *really* juicy! It was worth the time and I know I'll use the method to roast other chickens! I also used the drippings in the bottom of the pan to make a quick gravy to go with the mashed potatoes I put on the side... YUM! ONE NOTE... we have 3 little ones and I knew that the spice would be too much for them so I just used 1/2 the spice mixture on one chicken and put a more tame rub on the other chicken for them. Everyone was happy with the results!

'It's Da Bomb' Ranch Popcorn

I whipped this up in no time for our family movie night (Willy Wonka & The Chocolate Factory). Everyone loved it and it was a nice change from the norm. I did cut down on the butter (2 TBS)and it was fine. I did have a little bit of a problem with the butter/salt mixture sticking to certain pieces so maybe next time I'll have my husband stir while I pour to try to avoid that.

Whole Wheat Pancakes

It's just amazing!! I didn't have buttermilk so I made my own by adding a touch of vinegar to milk. Also, I added chopped walnuts and the added crunch was just amazing... It reminded me of IHOPs harvest crunch pancakes.

Oatmeal Peanut Butter Cookies III

I've been making these for over a year now and *always* have someone come up at some point of bringing them somewhere and say that they are THE BEST COOKIES they've ever had... and I have to agree with everyone else that THESE ARE THE BEST DANG COOKIES EVER! Seriously, they are amazing! I use my cookie scoop so they all come out fairly uniform and then because I do get a little particular about these cookies - I like to match them up in pairs and then put the filling in between the two cookies. These are definitely *NOT* fat free, but then - you gotta live a little! PERFECT AS IS! Thanks so much for posting this one!

Creamy Potato and Leek Soup

Such an amazing soup. I used 4 potatoes, and 1 big white onion. put them in the boiling water until the potatoes were really soft, then pureed them, put them back in the pot, and added the sauteed leeks. just amazing....my husband was amazed with the taste and the combo of tastes. the onion does a very nice change to it. a keeeeeeper...

Aussie Chicken

Ohh just amazing. i let the chicken marinate in worcestershire sauce, lime juice, and garlic powder. let sit in the fridge for 1 hr. And followed the recipe exact. It's Ramadan here, and it was the perfect dish to break your fast with. Just amaaaazing. Thanks alot, this will definately be a keeper.

Tangy Chicken Fajitas

Easy and quick marinade! The only thing I did was reduce the lime juice to 1/4 cup so it wasn't too overpowering and added a red bell pepper along with the green one. I poked holes in the chicken breasts to allow the marinade to soak in better and then threw the chicken and cut up veggies into a ziplock bag. When we were ready to go, I emptied everything into a strainer - took out the chicken and my husband grilled it on the BBQ while I sauteed the veggies. Served with: avocado & sour cream on the side -- SO DANG GOOD! We also had a bean/corn salsa which I hope to add to this site. I'll call it Brooke's Bean & Corn Salsa.

Hearty Breakfast Cookies

Love this recipe! I'm sure it was a great recipe as is, but to bump of the "health factor" a bit I made some substitutions that worked well. I know that drives some people crazy to change a recipe all around, but if it helps to tweak it, WHY NOT!? This way there's a healthier version to play with. Instead of all the butter I only used 1/4 cup of butter and added applesauce. Then I only used 1 cup of brown sugar. When I mixed in all the PB etc. I added one big banana too. I put in 1 and 1/2 cups of raisins because we like them and heated up 1/2 cup apple juice to let the raisins soak in and then I used that "raisin water" in place of the water called for in the recipe. I also added 1/3 cup of ground flax to give it some more good stuff. We eat them in the afternoon for a healthy snack or when we're running out the door on a busy morning.

Best Big, Fat, Chewy Chocolate Chip Cookie

A few years ago I was trying to find "the perfect chocolate chip cookie".... and here it is! I've made them for a few years and just had to rate them! The timing of the baking is VERY important! They do not LOOK done, but if you overcook them they will be VERY CRISP. Cooked for the lesser time, they are perfectly crisp on the outside and soft inside! The combination of ingredients make them the perfect consistency!

Downeast Maine Pumpkin Bread

whow! i never had pumpkin bread before. but this was delicious. nutmeg is not allowed in my country, so i used 2 tsp cinnamon instead of 1. i followed the recipe exactly, and can't believe how delicious it was, this is perfect for breakfast. next time,i might make them in cup cake liners instead of a loaf pan. i used one loaf pan for all of the dough. just amazing. and i might also cut a little on the sugar next time, maybe...

the secret to making this creamy is YOGURT! 1 or 2 tbsp make it amazing. i follow everything else in the recipe, except that i add yogurt. A man from syria told my husband this secret. and we all love it this way.

Cheese Garlic Biscuits II

These biscuits are awesome. I used 1 1/2 cups of cheese, and added a bit of baking soda with a little more baking powder than called for. since i didn't want them to look flat. the first batch i made came out good/very good. i got busy doing something, so after 2 hours of the dough sitting there, i came back and finished baking them. now these after sitting for a while came out PERFECT!!! the look of them was beautiful, like a smooth biscuit. not rocky looking like the first batch. You must try them. u'll love them. my whoole family was amazed.
