Overnight Caramel French Toast

Reviewed: Jan. 5, 2009
Okay - not that I shouldn't have known from the ingredients... but this weas like eating a CANDY BAR for breakfast. I only had one piece and I seriously feel the need to drink a lot of water to try to counteract all the SUGAR first thing in the morning. I used regular bread since that's what I had on hand and it was soggy... eeeeewwwww! So after baking it for 45 minutes I then put it in a pan and fried it (no more butter, just sprayed the pan) and it gave it a nice crispy kind of texture. It was just not the greatest thing for breakfast... for sure the sugar on top is overkill - if you wanted to make this I would suggested leaving out the sprinkled sugar and just doing cinnamon. And then just eat VEGETABLES the rest of the day.

Andrea's Pasta Fagioli

Reviewed: Jan. 5, 2009
This soup had me singin' in ITALIAN! OMGOSH it was soooo good and I'm not really one to rave over Pasta Fagioli! Really GREAT recipe! I only changed a few things... (which is big for me!) I chopped the onion ... I added 2 tsp of chicken bullion and a few dashes of salt too. I also added 1/2 tsp cumin and two parmesan rinds because it did seem like it needed a little something else. I didn't have the beans it called for on hand so I used one can of kidney and one can of black beans UNDRAINED... I didn't have the right pasta either so I used a tri-colored bow tie pasta which I DID NOT ADD RIGHT AWAY... I allowed the soup to simmer for an hour and 15 minutes - occasionally stirring it and I cooked the pasta separately so that it wouldn't get soggy with any leftovers. I just put in 1/2 cup of the pasta in the bottom of each bowl to serve and garnished with grated parmesan! Dang it was SOOO GOOD! Okay so... after typing this up it seems I did changes some things --- but let's just say I TRIED to keep to the recipe... oh yeah --- one more thing (I'm laughing now!) Instead of parsley - I always substitute cilantro.... I can't help myself. So... so much for not changing much! HA! Served with garlic bread - EVERYONE LOVED IT and most had seconds!

Spinach Lentil Soup

Reviewed: Jan. 4, 2009
GREAT soup! I used chicken broth instead of water and didn't really measure it. I just add what I need as I go. I also used 1/2 tsp chipotle pepper instead of the red pepper flakes. I would have used more if our kids weren't eating it. Everyone LOVED it! (even 6, 4 and 2 year old!)

New Year's Day Black-Eyed Peas

Reviewed: Jan. 2, 2009
I hadn't ever done the whole NY black-eyed peas thing but figured I'd give it a shot - these were good! Because we aren't able to get ham (Saudi Arabia) I did substitute chicken... and made it more like a soup by adding some chicken bullion/water and cilantro. Used can of chopped tomatoes too and I can rarely be bothered to soak beans so used a couple cans of beans and it was a good quick meal. Kids loved it to so maybe it will become a new tradition... assuming we find the black-eyed peas again next year!

Chantal's New York Cheesecake

Reviewed: Dec. 29, 2008
Simply the BEST and easiest cheesecake recipe to follow. I made this the night before I had guests and baked and forgot about it in the oven until the morning. I topped it with blueberry topping that I purchased ready made. Yum, yum, yum!! I had to scale down the recipe because I only had 3 blocks of cream cheese. Also, I didn't have any sour cream, so I used yogurt instead and it still turned out perfect!

Easy & accurate recipe to follow with excellent flavour! The only reason I'm giving it a 4 star is that it gets chewy when cool. So make sure you heat it up right before serving if not served hot out of the oven!

Fabulous, fabulous, just fabulous! The only adjustment I made was that I took Helen's tip on microwaving the potatoes first before mixing in the remainder of the ingredients. That insured that the potatoes were dry and semi cooked. This is certainly a recipe to add in my family cookbook.

Real easy to make but doesn't merit 5 stars... It lacks a bit in flavour and the consistency wasn't smooth enough.

Baked Potato Soup

Reviewed: Dec. 28, 2008
I'm a little embarrassed to say that I made "baked potato soup" without baked potatoes... so perhaps what I made was just Potato Soup... but nevertheless - because I didn't have any leftover baked potatoes - here's how I changed the recipe around a little and made a wonderful Potato Soup. I fried up the bacon and just kept it in as I sauteed the onion/garlic. Then I added the flour/spice mixture however I left out the salt because I always use chicken bullion in place of broth. After allowing that to cook about 2 minutes I poured in the 3 cups of water + bullion and got that boiling -- then added 2-3 potatoes cubed and boiled those until they were tender. I then used my immersion blender to mix it up a little and make it smoother and took it off the heat before adding the milk. We topped with the cheddar cheese and thoroughly enjoyed it, although I guess I can't really call it BAKED POTATO SOUP. this will go into our soup rotation for this time of year!

Honey Baked Chicken II

Great flavour works on roasting a whole chicken and wings too! I'm giving it a 4 star because of the necessary adjustment required for the amount of butter. Thank you for suggesting using only 1/4 cup instead of 1/2 cup.

Rolled Buttercream Fondant

Reviewed: Oct. 7, 2008
I *loved* this recipe! I hadn't tried a lot of fondant recipes before this so I was a little nervous! It was just GREAT! It is soft but after I mixed it, I just added a little more powdered sugar whenever it felt sticky. I rolled it out on waxed paper (making sure that the bottom part had a little powdered sugar so it didn't stick) then I put it into the fridge to chill before cutting it out. Worked like a charm! I'll definitely keep this recipe in my back pocket!

Pancakes I

Reviewed: Oct. 3, 2008
This is our stand alone recipe for pancakes for the past few years thanks to Cyndi for sharing... every once in awhile I'll try a different one and then I think... "why did I bother?!" and my kids really notice and ask for "the other ones!" We double it for our family with our 3 kids and we always serve our pancakes with plain yogurt and applesauce & a little syrup to give it a healthy boost.

The Best Thai Coconut Soup

Reviewed: Sep. 21, 2008
GREAT RECIPE! I didn't have lemon grass so I substituted green onion (cut on the diagonal for presentation) and added carrots - as well. I did only use ONE can of the coconut milk because I personally find it too overpowering with more. It was easy and so delicious! I served it with spring rolls as a side.

Baked Oatmeal II

Reviewed: Sep. 13, 2008
Pretty dang good! I did make a few changes -- (okay I made a good number of changes) based on the "too dry" comments.... I only added 1/4 cup melted butter and to that I added 1 and 1/4 cup applesauce. If I would have thought ahead I would've used apple butter instead though. I upped the cinnamon to 1 full tsp. Then instead of the craisins (I didn't have any) I added 1 cup of raisins and one Granny Smith apple (peel off) and sliced very thinly - coarsely chopped - I actually heated the milk and poured it over the raisins and allowed it to sit for 15 minutes to plump them up a bit.... Oh and I halved the brown sugar also so I only added 1/2 cup and it was plenty sweet. I actually prepped everything the night before and poured it into ramekins so that in the morning we had individual portions of the special treat. Kids liked it and it was a healthy option for us as a family.

Gobble Up Granola Snacks

Reviewed: Aug. 19, 2008
With all the reviews I was a little hesitant to make this recipe thinking it would be a big sticky mess... it was perfect the way it was written! I did spray the pan and also sprayed the back of a wooden spoon to help push it into the pan nicely. Then I put them in the fridge to chill them and THEY JUST DISAPPEARED! They were a sure fire hit with my kids! I think I might try to substitute the corn syrup with honey to at least TRY to make them a little healthier.
