Lebanon’s culinary history reflects its Mediterranean geography and strategic location at the crossroads of successive civilizations and the ancient overland spice trade. With ingredients and traditions imported from invading Arabs and Ottoman Turks to nomadic Bedouin tribes; Jewish, Islamic and Christian influences; and Persian culture, Lebanese cuisine is sophisticated, subtle and complex. Lebanon’s cooks favor meat-based dishes with contrasting flavors. Bread is sacred, and never discarded. Lamb and mutton, dates, yogurt, tahini or sesame seed paste, beans, rice, almonds, and lemons are traditional ingredients. Arab influences include garlic, olive oil, cumin, cinnamon, and floral essences. New World ingredients such as tomatoes, sweet peppers, and summer squash, arrived in the 16th century with Sephardic Jewish merchants expelled from Spain. Signature Lebanese dishes include baba ganouj, tabbouleh, falafel, kofte, kibbeh, and hummus.

Fluffy Pancakes

This is a great basic recipe! Yummy and fluffy! I use melted, cooled butter instead of shortening. My favourite flavour is bananas and cinnamon! The only complaint is it really doesn't make the quantity it claims.

Shrimp Scampi Bake

We just finished eating this for dinner...amazing! Better than any restaurant. I added salt and pepper, increased the amount of garlic, and used less butter in the sauce. I then threw some halved grape tomatoes, grated parmesan and bread crumbs as per others reviews before placing all in the oven. So wonderful over angel hair pasta with a side salad!
