Healthy Banana Cookies

I was looking for a healthy sugar free yummy snack recipe for my 10 month old. This is perfect! I made small size cookies perfect for little hands! he loves them! I've made them many times already. I've also substituted applesauce for the oil to make them even more guilt free:)

Fortune Cookies I

I was so excited to find this recipe. I doubled the recipe and added a few TBL water and a bit of oil to the batter.The hardest part at first was shaping it so I devised this method after a few tries: I placed a kitchen towel on the table and on top of it a piece of wax/baking paper. Then I placed the flat cookie hot out of the oven on it, inserted fortune and quickly sealed it(keeping my hands on opposite side of towel) and placed in muffin pan to cool. Give yourself a couple hours for this since you can only make about 2-3 at a time.

Chicken And Apple Curry

This was quite tasty. I used coconut milk and more curry. I also baked it over a bed of raw rice and added water. The flavors seeped into the rice. I only didnt really taste a distinct apple flavor.

Peanut Butter and Banana French Toast

I mixed the peanut butter and banana together in dish and spread between slices of bread. I also dipped into plate with cinnamon and sugar after the egg dip. it was outstanding!!

Chocolate Trifle

We dont eat chocolate so I made carob brownies and layered with carob mousse and nut pudding and whipped cream. It was such a hit and nobody knew it wasn't chocolate!!

Clone of a Cinnabon

Just to add my applause to the list - these were fantastic! I also made by hand (no bread machine), and used a quick-rise method - placed the dough in a warm oven for 20 minutes, then when baking, started the oven on a very low temp for 5 minutes (150 F) and then cranked it up to the right temperature for 15 minutes. Amazing! I also used vanilla/cinnamon sugar and dark brown packed sugar for the filling. enjoy

This was great! it reminded me of a flat version of pita bread. the only thing I would do different next time is add more sugar, and roll it paper thing before cooking it. I will be making it again.

Maple Banana Bread

I couldn't find my loaf pan so I made these into banana muffins. Fill your muffin tins (with liners) only 1/2 way, as they expand! I baked it for about 15 minutes, at the recommended temperature. I also skipped the maple extract (didn't have any on hand) and added 2 teaspoons of vanilla sugar, and cut back a wee bit on the syrup (to compensate for the added sugar). Divine!

Lentils and Rice with Fried Onions (Mujadarrah)

The original seasoning for Mujadarah includes not only salt and pepper, but cinnamon too. You will be surprised how well the cinnamon flatters the taste and aroma of the fried onion. Just be gentle with it, just a touch is all it takes.
