The third largest Mediterranean island, Cyprus is rich in natural beauty, agriculture, and history. The island was historically sought after by those trying to secure their control over the Mediterranean and access the spices and treasures of the East. While acknowledged as The Republic of Cyprus, the struggle for control of the island continues with its division into Greek, Turkish, and British areas. Cypriots eat a true Mediterranean diet, heavy in fish, seafood, olive oil, wine, Yamista (stuffed vegetables), Souvla (grilled, skewered meats), sheep and goat milk cheeses, fruits, wine-cured sausages, nuts, and olives. Eggplant, zucchini, and tomatoes are showcased in their famous Moussaka. Middle Eastern influence is found in the abundance of rice, parsley, mint, and other herbs and spices. For a bountiful sampling of the local delicacies, sit down for a meze, a meal of small plates (up to 20 or 30) starting with vegetable dips and olives and ending with rich grilled meats.

Sugar and Spice Muffins

How can this recipe have so many good reviews? I followed the directions exactly, and they came out very bland. They weren't awful or anything, just no distincitive taste, no pretty texture, nothing. I can sure use my ingredients for something more impressive and tasty than this.

Greek Lemon Cake

Light and lemony and just perfect for a warm cup of coffee and a good book! I used margarine istead of butter and it came out fine. I also drizzled a simple powdered sugar/lemon juice frosting on top and the extra tanginess was just lovely. Yum! Love it!

Hot Fudge Sundae Cake

This recipe is very easy, i like the concept of it, and it's not bad. However, it's not good either. The main problem is that it's very bland, the taste is very...one dimensional. It's just...sweet. It seems to be missing something very important taste-wise, that i just can't put my finger on. Not bad, but not good enough to make again. Sorry!
