Chicken Fettuccini Alfredo

Reviewed: Jul. 24, 2008
Yummm!!! It tastes AMAZING. I followed the recipe as closely as I could. Omitted the italian seasoning, mushroom (used olives), tomato, half n half and used mild cheddar instead of Jack-Colby. I don't think it needs salt. The sauce was creamy and delicious. It was a little grainy, but I guess that's cos of my inexperience and not the recipe. Im surely going to try it again... this time with some oregano and spice.

Deluxe Mashed Potatoes

Reviewed: Jul. 15, 2008
Yummmmmmm... I followed most of the recipe. Accidentally dropped lots of oregano... turned out awesome. Since I was just making it for home, I sprinkled half the dish with parmesan and bread crumbs and the other half with cheddar and baked at 350 for 15 mins. Both sides tasted great and I tried out 2 variations at one go :-)

Italian Fish Fillets

Reviewed: Jun. 23, 2008
This recipe was easy to make, but too bland for my liking. It needs to be pepped up. Next time, I will pan fry the fish before adding it to the sauce. The sauce could do with some garlic. Hopefully, that will improve the flavour.

An excellent salad! Loved the toasted croutons. Couldn't wait for it to stand for 20 min - it was polished off immediately!

Oh my God! This was just too good! And so easy too. I served them with vanilla icecream on the side. The hot pudding and the cold icecream will transport you to another level!

Eggless Chocolate Cake II

Reviewed: May 26, 2008
I am a vegetarian but do not eat eggs. I love to bake. Usually my egg substitute works on most baked goods so I have no problem. However, my cakes never have a stable base without eggs and end up breaking. When I saw this recipe I was eager to try it, hoping it would solve my cake baking problem. And boy was it great! I rose up wonderfully and was so rich, chocolaty and fluffy. I added 2 cups of semi-sweet chocolate chips to add a nice crunch. I didn't have a 9x13 in. pan so I baked mine in two pans. One was a 8x11 in. oval pan and the other a 8x8 square baking pan. I filled them 3/4 of the way and baked it for 30 minutes. It rose all the way to the top and was crusty on top and soft and fluffy on the inside. After letting it cool I iced it with chocolate butter cream frosting and white icing. My family was so eager to eat it and were waiting with their plates and forks by my side. They even ate the smaller cake without any icing. My brother even added a piece to ice cream and ate it like a warm brownie. This is a wonderful recipe I will use again!

Easy Pesto

Reviewed: May 21, 2008
This reads so easy and with almonds. thats the good news.I will surely try it and come back with a review. A simple tip on toasting nuts is to heat the oven on its higest temp.(250 degrees celsius) switch off the oven and place a tray of nuts.Forget about it.When the oven is cool (about 1/2 an hour) you will find the nuts beautifully toasted without the bother of checking for doneness or stirring every few minutes.

Indian Style Basmati Rice

Reviewed: May 20, 2008
This is a good recipe. However, you can make a few changes to imrove it. If you wish to serve the rice looking white instead of brown, don't allow the onions to colour - cook them till they are just about to turn golden. Also, if you use ghee instead of oil, the aroma will be absolutely heavenly! Add a few bay leaves too. You can turn this into a vegetable pulao by adding diced carrots, beans, peas, cauliflower and potato; and increasing the water content slightly. A great way to make children eat their veggies!

Pizza Dough I

Reviewed: May 1, 2008
Great recipe if you are in a hurry to get something on the table. I had to add 2 more tbsp of water to the dough b/c it was bit too dry. If you want a real yeasty crust and have time to let it rise, then you should try another recipe.
