Eggless Chocolate Cake II

Reviewed: May 26, 2008
I am a vegetarian but do not eat eggs. I love to bake. Usually my egg substitute works on most baked goods so I have no problem. However, my cakes never have a stable base without eggs and end up breaking. When I saw this recipe I was eager to try it, hoping it would solve my cake baking problem. And boy was it great! I rose up wonderfully and was so rich, chocolaty and fluffy. I added 2 cups of semi-sweet chocolate chips to add a nice crunch. I didn't have a 9x13 in. pan so I baked mine in two pans. One was a 8x11 in. oval pan and the other a 8x8 square baking pan. I filled them 3/4 of the way and baked it for 30 minutes. It rose all the way to the top and was crusty on top and soft and fluffy on the inside. After letting it cool I iced it with chocolate butter cream frosting and white icing. My family was so eager to eat it and were waiting with their plates and forks by my side. They even ate the smaller cake without any icing. My brother even added a piece to ice cream and ate it like a warm brownie. This is a wonderful recipe I will use again!

Chocolate Oil Cake

Reviewed: Apr. 24, 2008
i made this cake today .i mixed the cocoa powder in water and added.this prevents lumps and the cocoa mixes well into the flour. i halved the amount exactly. soon after baking there was a hard crust on top which made me think i ve choosen the wrong recipe. but by the evening/next day it turned out amazingly moist and soft.nobody believed its without eggs and butter.i didnt have white vinegar so added apple cider vinegar and the rest followed the recipe exactly.definitely a great, easy cake .thanks for sharing the recipe.

Salmon and Spinach Fettuccine

Reviewed: Mar. 5, 2008
So good even after I cut down on almost all the butter! I did not have smoked salmon so I baked some salmon with salt, pepper, some fresh ginger and a little bit of garlic at 375 for 12-14 minutes. For the sauce, I just use half a tablespoon of butter. I cut down the milk by half and did not use flour. This is was soooo good! Thank you so much for posting this!

Blueberry Streusel Muffins

Reviewed: Mar. 1, 2008
I don't know if it is just that i REALLY messed up the recipe, but these muffins came out really bad, with no taste whatsoever. As someone else said, the non-berry parts are tasting very bland, even with the addition of some lemon juice.

Ripe Grape Pie

Reviewed: Feb. 24, 2008
this recipe turned out amazing!!i was a little apprehensive about the grapes, but it was sooo yum! i used a shallow dish, and strips of dough instead of a whole covered pie, and baked for about 25 mins at 200C, coz the filling bubbled over at higher temperatures. next time I'm thinking a streusel topping would really go well with this pie!! thanks a ton!!

Magic Peanut Butter Middles

Reviewed: Feb. 10, 2008
These were really good! I followed the recipe exactly, EXCEPT that I used natural peanut butter (it made the PB mixture rather crumbly, so making the balls was a bit of a challenge) and added a tbsp of milk to the cookie mixture, as suggested by others. I didn't run out of cookie dough. I used about a tsp of the peanut butter mixture for each ball. I also kept the balls of PB mixture in the fridge for about two hours. All in all, these were delicious!

Red Velvet Cake I

Reviewed: Feb. 2, 2008
i made this cake for a ladies party. the cake i did following the reviews from other members by adding 1 cup oil,2 cups sugar,4 tbspn cocoa. i didnt use vinegar. after baking it for 30 min the cake was done but dry with a big crack on top.i used a cake leveler to level the top.i baked the cake in a single big round pan instead of 2, 8 inch pans.the icing was definitely the best. i added pink and yellow colours to it and iced the cake. i also added 1/2 can of mixed berry pie filling between the layers and sprinkled some sugar.it was a hit with my friends and after seeing this cake i have recieved 2 orders for making birthday cakes.the taste of the cake improved with the icing and pie filing.
