Thailand

Thailand is a fertile country with a varied geography and long coastline that encourages great culinary diversity. Much of the unique flavor of Thai food comes from a pleasing combination of fiery spice, aromatic herbs and piquant condiments. Chili peppers, fish sauce, shrimp paste, limes, coriander and coconut milk contribute complex flavors. Openness to trade and foreign cultures left Thais keen to the culinary splendor of India, Europe, the Middle East and China. They were quick to incorporate foreign foods (including tomatoes and chilies from the Americas) into their already rich repertoire. In Thai cooking, rice serves as the starchy foil for the flavorful soups, seafood dishes and salads created from this abundance. Thai cooks use quick preparations like stir-frying, blanching, poaching and parboiling to emphasize the freshness of choice ingredients.

About me:
There are nothing like mom cooking. I begin to realize and agree on this when I live in the U.S. My mom is now my cooking mentor, she is guiding me on how to cook over the phone. I have never known how much I love cooking until I live on my own. Now I dream to have my own cooking class some days in a near future.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed on May 20, 2009 by Chantarat
I like this recipe, the cookies tastes very good and it's chewy but I do have a problem when baking, my cookies didn't spread out flat, so I needed to flat it down by pressing it by hand. Is anyone know why? But most of all this cookie is perfect one so far.

Cinnamon Rice with Apples

Reviewed on Mar. 16, 2009 by Melissa Moo
Delicious! I substituted a mix of brown and wild rice. Package directions said to simmer 45 min, so I added apples and everything else 15 min before the end of cooking. I also substituted dried cherries for raisins and added 1/2 cup of chopped pecans.
