Spiced Sweet Roasted Red Pepper Hummus

Yum! :). Didn't really change anything except that I didn't add parsley because I didn't have it. Tasted great with fresh cilantro though!

Whole Wheat Blueberry Pancakes

this was good - not to die for, but a good breakfast to start the day. i doubled the recipe and added 1 more egg. took the advice of others and added 1/4 cup more milk (2%). mashed 3 bananas and added it to the batter because i didn't have blueberries. also added about 1 tbsp. pure vanilla and an extra tbsp. of splenda.

Fresh Semolina and Egg Pasta

Reviewed: Apr. 4, 2009
This turned out really great! A suggestion for those working with your hands: make sure you roll these out thin (THIN! If you *think* you rolled it out thin enough, it probably isn't. Lol. I made that mistake!). They will plump up when you are ready to cook and wont cook properly in the center. Flour your surface well when you are rolling it out and be sure to flour both sides of the pasta so that it doesn't stick. ...Good luck! :).

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 26, 2009
Yum! This Irish soda bread really IS easy to make and it tastes superb! It's my favorite bread to make because it takes little prep time and cooks beautifully in the oven. I agree with other reviewers that this needs to be cooked longer with less heat. It gives the bread a great crusty exterior without burning the bottom.

Baked Ziti II

Reviewed: Mar. 25, 2009
This recipe is SO EASY to make! I made two batches so I could freeze one for later. It hardly took me any time at all to add the doubled amount - I would definitely recommend this for a freezable recipe! I wanted to add some vegetables, so I added a layer of zucchini and squash to the mix. Also, I didn't bother with the layering as some recommended. I figured it would taste the same mixed up (as one reviewer pointed out that it did - just not as pretty) plus I was making a double batch... might as well make my life easy! :). This recipe is great for making additions to, but is also great as is.

French Breakfast Muffins

Reviewed: Mar. 7, 2009
This is really good but I think it makes only 6 muffins, not a dozen decent-sized muffins. Forcing the recipe to come out with a dozen muffins will yield very small muffins. I would also use half of the topping ingredients only and use a pastry brush to coat the muffin tops with butter.

Crab-Stuffed Mushrooms

Reviewed: Mar. 3, 2009
I love stuffed mushrooms, but I could not enjoy these! The taste of "canned crab" was so overwhelming for me; I think I would have been better of using fresh lump crab meat. It was a bit bland even after I added a few things, but squeezing lemon juice over the top did spruce it up a bit.

Chocolate Chocolate Chip Cookies III

These cookies are great! They come out fluffy and very soft, so it was a bit difficult for some to come off the pan. I did end up breaking a few. I think next time I'll lightly grease my sheets so as to prevent the sticking.

Beacon Hill Cookies

Ugh - these cookies tasted SO good except that mine came out looking like little fudge morsels, which although was really very tasty, I'm quite certain was not how they were meant to look. I'll have to come back to these to practice perfecting my egg white beating skills. If you ARE interested in "fudge morsels" then I suggest allowing your egg whites to get weepy, lol. :).

Slow Cooker Ham

Reviewed: Feb. 28, 2009
I don't have the heart to give this recipe a negative star rating; all things considered. However, I will tell people my experience with it just in case it helps someone out. First and foremost, make sure you determine the size of ham you will need based on the size of your crock pot! I thought that my slow cooker was much bigger than it really was. SURPRISE, an 8lb ham would NOT fit into it. I had to slice half frozen meat off the bone; it took about 2 hours. My husband was concerned I didn't add any water. I am glad I did not as it made more than enough liquid on its own. I did add 2 juiced oranges, cloves, and honey, which smelled nice. Here's the part I didn't get: We weren't 100% it was done when it was done. The meat turned gray near the top. My husband seems to think it had something to do with being near the top where the oxygen can get through the lid. I don't know.

They were awesome! And my aunt actually liked them! LOL, I made two different batches, one plain and one with some crunchy cereal and raisins. They were yummy! Next time, I'll try in some m&m's, raisins, other cereal and milk. Oh, and probably peanut butter too. LOL, Thanks for posting! They're affordable and yummy and I'll ALWAYS make these from now on!

KELLOGG'S* RICE KRISPIES* Squares Original Recipe

Reviewed: Feb. 13, 2009
Well, I had to make these in secret before my aunt woke up, Long story. I did the marshmallow mixture all wrong, DO NOT use colored marshmallows on a stove top and constantly stir. It'll not be a good color...(unless maybe you segregate the colors or melt them seperatley)... I did this mistake of using a spatula and I had to throw the batter when my spatula melted. (I am a kid anyway so it's excusable) Which means I got to wait till next week again to try these out... wish me luck the second time! :) Okay, next day! I made them with white marshmallows but lessened the cups of cereal. I only had about 4 1/2 cups so I made use of that and I added some extra marshmallows as well and cereal bits. Yummy!

Strawberry Spinach Salad I

My husband never thought he'd like this salad because he doesn't enjoy vinegarette dressings, but he loved it! I tossed in some romaine lettuce and alfalfa sprouts and we were able to munch on it for the rest of the week (I made the dressing on the side of course).

This is the easiest quiche recipe I've ever tried. You can even add different types of fillings--blanched spinach, diced, cooked sausage or ham cubes. I also substituted 1/2 cup cream for part of the milk.

Garlic Rice

Reviewed: Jan. 7, 2009
This is a breakfast staple in the Philippines. It is usually eaten as you would have bread accompany your meals. It is normally served to accompany Filipino sausages (with as many varieties as there are regions in the country), thin slices of fried beef (called tapa) or sweet pork (tocino), or fried fish...even corned beef, luncheon meat, or chicken/pork adobo, for breakfast. Most times, slices of tomatoes and cucumber or pickled vegetables are served on the side while the fried meat or fish is dipped in vinegar and minced raw garlic, with salt and black pepper. The garlic rice, therefore, need no meats in them. It is not the basic "sinangag" (as it is called locally) Basic is the garlic. The best to use is day-old cooked rice. When the rice becomes hard in the fridge, just wet your hands and mash the rice to crumble when ready to cook. The finished product is not supposed to be wet but toasted. That is why it has to be "dried" for at least a day in the fridge. That is why it is really called Garlic Fried Rice. Season to taste with salt and pepper and/or enhance further with meat powder while cooking. Turn heat off only when you are satisfied with the consistency achieved. Basically though, except for the pork added, this is the way this dish is done by Filipinos.

Filipino Pork Adobo

Reviewed: Jan. 2, 2009
I was born, raised and still living in the Philippines. I know there are several regional versions of adobo here but I never heard of any with catsup in it. Some of your reviewers were right. It's also too salty. You may do away with the salt. The ratio of vinegar to soy should be 1/2 cup vinegar to 1/4 cup Filipino soy (the Silver Swan brand being the best, if you can get it Stateside). Also, I find the bay leaves too overpowering,1 or 2 would do. Whole peppercorns are usually used and adding pork liver (cut into 1 inch x 2 inch pices) provides a richer and thicker sauce. I usually add more garlic than suggested. Traditionally, adobo does not have vegetables added to the meat. Vegetables are side dishes to compliment it.
