Let me first state 5 things: 1. This was my first time to make brittle. 2. I can't make candy. 3. I'm not big on eating pumpkin seeds. 4. I'm not a big fan of brittle because it sticks to my teeth. 5. My kids can't handle hot/spicy food so I decreased the cayenne pepper to just a sprinkling...... Ever since I saw this recipe on the Exchange, I thought it was too unique to not at least try it once. Also, I had about 2 cups of pumpkin seeds left from Halloween pumpkins and I found a bottle of dark beer so this was a perfect recipe for me. The final result was very tasty. I did dry the brittle a little thick (since I wasn't sure how thinnly it should have spread out) so most of it was brittle texture and the rest was more of a "soft crack" brittle. My husband loved all of it. My kids loved all of it. Finally, I loved the "soft crack" brittle and it was soft enough for my 1 year old daughter. Since I used a whole cup of pumpkin seeds and didn't spread the brittle thin enough, I did have a lot of pumpkin seeds left on the pan (which was my fault completely since this is my first time to make brittle candy). BRAVO SUEB ON A GREAT RECIPE! I might take some to my MIL's to share, that is if we don't eat it all my Christmas Eve. :) Served with "Fresh Pea Soup," "Italian Peas," "Fried Broccoli," "Ham and Cheese Bowties," and "Hot Toddy."
