Indonesia

Indonesia is the world’s fourth most populous nation. Comprised of some 17,500 islands, this South Pacific nation with 250 ethnic groups spans one-eighth of the globe. An important trade region since the 7th century, Indonesian cuisine incorporates indigenous ingredients and techniques with those of historic trading partners China, India, neighboring Southeast Asian countries (such as Malaysia), the Middle East and Europe—Portugal, Spain, Britain and The Netherlands in particular. Cooking varies greatly by region. In general, coconut, banana and seafood (both dried and fresh) are star players in the Indonesian diet, as are fragrant spices such as coriander, ginger, turmeric, cumin, and lemongrass. A typical meal is built around a cone-shaped pile of rice in which a variety of soups, curries, sambals (chile-based relishes) and other dishes are all served simultaneously. Prepared in the morning, food is set out midday to be enjoyed over the course of several hours.

Mexican Bean Salad

It may be a little labor-intensive and requires a lot of ingredients but this bean salad is totally worth it! I've never tasted anything like it. The Mexican bean salad turned out fresh, delicious, spicy, with a nice sweet and salty tang to it. It doesn't hurt that it is so healthy too! It keeps very well and is a perfect side and/or snack!

Deep Dark Chocolate Souffle

Simple, delicious, (relatively) healthy and oh-so chocolatey. This is a perfect recipe for anyone who needs a less guilty chocolate indulgence. Serve immediately before it loses volume and deflates!

Lentil Soup

Delicious lentil soup recipe that is super healthy! It is very flexible in terms of adjustments according to what you have (or don't have) in your kitchen pantry. This is my go-to lentil soup recipe that I can't survive without in winter!
